Crustless Spinach Quiche

This was SO yummy! I used about 2 cups of cheese instead of 3, and used Swiss instead of Muenster. I also added some mushrooms. This was extremely easy to make and super delicious. This will be a staple in my dinner rotation!

Pecan Snack

I made this following some to the other reviewers suggestions and it turned out fantastic! The alterations I made: added 1 tsp vanilla, used 1/2 cup white sugar, 1/2 cup brown sugar. These will be given out as Christmas gifts to my pecan loving family members.

Wine Jelly

I have never made jelly before, so this was definitely a learning experience! Other than overflowing the pot of hot jelly, this recipe was amazingly easy to follow, not to mention delicious!! It made a little more than what it said it would and I just poured that little bit into a container I had. Once it set up, I couldn't stop eating it! The flavor is amazing and not too much like wine. I'm giving these out to my wine loving friends. I hope they enjoy it as much as I do!

Mushroom Pork Chops

I substituted pork steaks for pork chops because I had some in my freezer I needed to use. This turned out wonderfully! The meat was nice and tender and the sauce was delicious. I added onions and diced green peppers to my sauce (I needed to get rid of them) and the onions gave it great flavor. Can't wait to try this again with pork chops!

Egg and Sausage Casserole

This is the easiest, most delicious, breakfast casserole! I did what many others did and precooked my crescent rolls about 6 minutes in the oven, and I also cut my cheese in half. I love cheese, but four cups of it is a lot! I made this for dinner one night and had the leftovers for breakfast the next day. This casserole reheats surprisingly well.

Zucchini Brownies

This recipe turned out absolutely delicious! Very rich and chocolatey. I followed the recipe exactly, and will make this again. The brownie didn't turn out exactly like a traditional brownie- it wasn't chewy and had more of a cake like consistency. The frosting tasted just like fudge. The next time I make them I will not do frosting on them. While it is delicious, it is quite rich! I enjoy a lighter brownie.

Meatball Nirvana

I pulled up this recipe for my boyfriend when he asked me "How do I make meatballs?" Based on the good reviews, I knew this recipe probably wouldn't fail him. I was right! He loved these meat balls and even used the meat to make a few burgers. We did do a few substitutions- eggs for milk, real garlic instead of garlic salt, and no bread crumbs (we were out). These turned out amazingly. Leaving the onions coarsely chopped made for a nice texture. Delicious.

Peanut Butter Vegetable Chicken Soup

I had really high hopes for this soup! The taste was delicious and I had a couple of bowls full. The texture was creamy and rich. The problem I had came when I got sick about an hour after eating the soup. I'm thinking it was simply too rich for my stomach, and I don't have a sensitive stomach. I will not be making this again.

Chocolate Mint Cookies I

These are so delicious!! I'm not even a huge fan of the chocolate-mint combo but these are so good I had a hard time getting myself to stop eating them. I think the recipe is relatively simple and easy to make. I made a batch a couple of days ago to freeze for Christmas, but I've discovered that I think these are more delicious frozen than they are room temperature! I can't keep out of them and I'm going to have to make another batch this week.

Slow Cooker Pulled Pork

I tried this a couple of days ago on a pork roast I needed to use up in the freezer. It was the BEST pulled pork I've ever made! I did sprinkle some garlic powder and paprika on top of the pork before I closed the lid. I know one other reviewer mentioned that the part that wasn't covered with root beer was kind of dry, and I found that to be the case too. Next time I will completely submerge the pork in root beer. It was falling apart, extremely moist, and delicious. This will definitely be the only way I make pulled pork in the future.
