African Chicken Stew
This has become a family favorite. I use less chicken, more garlic and cumin, and add a vegetable such as cauliflower when I mix in the garbanzo beans.

Eileen's Spicy Gingerbread Men
Phenomenal. We make these every year for Christmas. We follow the recipe almost exactly -- the only tiny change we make is to omit cloves and use a full teaspoon of cinnamon.

Carrot Cake III
A very special cake. We made it as a family project with the kids and grandma, who loves carrot cake. We prefer walnuts so used those instead. Used 3/4 cup oil, 1 cup white sugar and 1 cup brown sugar, 8 oz. crushed pineapple, and included the pineapple juice (we needed more liquid since we cut down on the oil). Included 1/2 teaspoon of nutmeg. Otherwise, we followed the recipe. Really delicious and incredibly moist.
