What a fabulous recipe! Krista V I took your advice and used applesauce instead of butter/margarine and it was great. I love when you can substitute with applesauce, I do it whenever possible to cut down the fat. I only made a couple changes to the recipe to suit my personal taste. I used 1/2 cup white sugar, 1/2 cup brown sugar, added 1 tsp. vanilla extract and 1/2 tsp. cinnamon. Also I do not have a loaf pan so I used an 8x8 square pan and a small muffin tin. I ended up really liking these pan sizes because it only needed 20-25 minutes to bake and I can just grab a muffin on the way out the door. Thanks for the great recipe, I will use it often!
