Tasty Lentil Tacos

This dish was incredibly flavorful and filling! I have made it twice. The first time I followed the recipe exactly and my boyfriend and I really loved it. The second time I made it in the slow cooker and used vegetable broth instead. I did not like the slow cooker version as much and will continue the stovetop preparation in the future. The lentils just didn't get as nice a texture in the slow cooker. We had leftovers both times and made wrap sandwiches and quesadillas with the filling. Great re-heated in these dishes. This was really a great recipe, I highly recommend it. My advice is to follow the directions exactly and remember to use your favorite salsa, I think that is key. I will probably try the vegetable broth again the next time my vegetarian brother visits, I will let you know how that turns out.

Baked Potato Soup

This was a great potato soup!! I used turkey bacon so I had to add butter since there wasn't fat drippings left over at the end. Also I used russet potatoes and because of the low starch count I added more flour in the last step to really thicken it up. Thanks for the recipe, it's a keeper!

BAKER'S® ONE BOWL Coconut Macaroons

This did not work for me very well. I lowered the sugar amount like other reviewer's suggested and it was really wet. I ended up adding some more coconut and flower to stiffen it up some and it just did not turn out like I hoped. I think I was looking for a lighter, airier macaroon. I will keep trying and I at least learned from this attempt.

Baked French Fries II

Great recipe! I followed it exactly and my boyfriend and I were very happy with the results. It did not specify freshly grated parmesan or the powdered kind so we used the powdered kind. It Was good that way but we're going to get some fresh and I bet it will be even better.

The Best Banana Bread

What a fabulous recipe! Krista V I took your advice and used applesauce instead of butter/margarine and it was great. I love when you can substitute with applesauce, I do it whenever possible to cut down the fat. I only made a couple changes to the recipe to suit my personal taste. I used 1/2 cup white sugar, 1/2 cup brown sugar, added 1 tsp. vanilla extract and 1/2 tsp. cinnamon. Also I do not have a loaf pan so I used an 8x8 square pan and a small muffin tin. I ended up really liking these pan sizes because it only needed 20-25 minutes to bake and I can just grab a muffin on the way out the door. Thanks for the great recipe, I will use it often!
