Jamie's Minestrone

Reviewed: Jan. 15, 2011
Homemade soups are super nourishing. This is a great recipe. May I make a few suggestions? keep celery in. It's a wonderful, mild diuretic. keep zucchini also. Green beans: fresh are best. simply wash an cut into 1" angled pieces.. so easy. Homemade chicken broth... a good habit to get into making a big batch once a week. preferably use a can of organic chopped tomatos (juice is optional) and can of organic beans, unsalted (your choice) for greens lacinata kale is superb as well as endive.... as for pasta, it's best to add at end of cooking soup. Turn off heat, throw in handful of raw pasta and let sit about 8 mins. Pasta should always be "al dente" Otherwise if overcooked, it spikes insulin levels rapidly. wine would be optional... I would increase fresh chick broth instead and finally, of course, fresh grated parm cheese. Yummmm !

Bread Pudding with Whiskey Sauce III

Reviewed: Oct. 8, 2010
THis is a good recipe, but I reduce sugar to 1 C. and sometimes use a multi-grain bread. Also corn syrup is so bad for us, so I melt butter with some maple syrup and brandy to taste. Buon Appetito !

Lots of processed foods in this.. (high sugars, bad fats, chemicals, etc) made my own brownies (quick and easy) made my own vanilla custard (so simple!) and whipped my own fresh cream.. delicious !! Enjoy knowing what's in my food and controlling what goes into it.

Pignoli Cookies I

Reviewed: Dec. 20, 2009
Simple recipe, delicious! I have a very old recipe from my Italian family which is: 1 lb almond paste, 4 egg whites at room temp. 1/2 c sugar, enough pignolias to coat cookies. I modify by not adding any sugar (almond paste is plenty sweet) Mix almond paste and egg whites in heavy duty mixer. because this mix is very wet, I add about 1 c. fine shredded unsweetened coconut and about 1 c. slivered almonds which I've chopped in food processor. Mixture will now be stiff. use about 1 T dough for each cookie.. flatten slightly and press into pignolia. Bake 350 10 - 12 mins
