Lemon Blueberry Bread

Made this today with some of our abundant blueberries. I doubled the recipe and added a palmful of cake spice to the batter because my husband loves cinnamon. I also used dehydrated lemon peel (Penzeys) in place of juice and zest. I got 12 mini loaf cakes from the batch that took 33 minutes to bake. Will def make again! Very good!

Spicy Mexican Torte

Awesome! I made this for dinner last night and my husband and I both loved it! He quickly packed up the leftovers and declared them to be "his lunch for tomorrow". I always try to make a recipe exactly as it's written the first time I make it, but I had to make changes to this one based on what I had on hand and what the other reviewers advised. So here's what I did: Instead of chorizo, I used leftover shredded chicken because that's what I had Used whole wheat tortillas because we always use whole grains Used low fat Mexican blend shredded cheese skipped the red peppers Added a can of corn because we love all "corny" things :) So I used a glass pie pan, sprayed it with PAM. Laid down one tortilla rather than two based on prior reviews, and I'd say they were spot on with that recommendation. Then I put in 1/2 of my chicken mixture, to which I added 1/2 can of enchilada sauce because is just looked like it needed it! Sprinkled with cheese and then laid down the next tortilla and spread that with 1/2 can of beans and sprinkled with cheese. Next tortilla and remainder of chicken and a sprinkle of cheese. Last tortilla and remainder of beans topped with the other 1/2 can of enchilada sauce and then the remaining cheese. I then took a sharp knife and poked holes down through the layers for the enchilada sauce to seep into. Baked at 350 for about 35-40 minutes. It was FABULOUS. We will make this one regularly for sure!

Crunchy Romaine Strawberry Salad

Made this salad for dinner last night. My husband and I both thought it was very good. I made it as writeen except for the butter. There's no way I could justify putting 1/2 a stick of butter in a salad!!! I used only about 1 tablespoon, and it was great. I also used seasoned rice wine vinegar instead of red wine which means that I also omitted the sugar since the rice wine is sweetened. Overall we thought it was great. Very fresh and light for a summer night's dinner. My husband, of course, had to add grilled chicken to his! :-) We'll definetely make again, especially when strawberries are in season, as they are now. Great way to use up all those juicy red strawberries!

Sesame Seared Tuna

I was soooooo disappointed! After reading the reviews I had myself all psyched up for this dish. But neither my husband or myself cared for it. At all. We thought the sesame flavor was overpowering and the smoke in the house from the preparation was very unappetizing. Darn -- I really wanted to like this one!

Spaghetti Pizza Lasagna

My family and I really loved this recipe. I used whole wheat spaghetti and omitted the pepperoni. Followed everything else exactly. Treat it like lasagne and let it sit for 10 minutes or so after it comes out of the oven. You can then cut it into perfect squares for serving. Yum yum yum. Makes a lot too!

Apple Pie by Grandma Ople

Wow! Fantastic! The best I've ever had. My husband -- the all time apple pie critic -- loved it too. I made as directed, but did add cinnamin and a little nutmeg. Can't have an apple pie with out cinnamin! My other advice is to leave the sugar mixture on the stove until you're ready to use it. I had mine off the burner for 1/2 hour or so, and it got quite thick. Had to heat it up again to be able to pour it over the pie. Definetely will make many times!

Firecracker Grilled Alaska Salmon

Awesome recipe! I bought more salmon than I thought I needed, but my husband and I were still fighting over the last morsels. I marinated this for about 24 hours. I had everything in the house for the marinade and made it exactly as described. Not too spicy at all -- perfect in fact! Can't wait to make it again!

Cucumber Peanut Salad

Romaine Rice Tuna Salad

Really great recipe! Perfect for dinner on a hot summer day. I made the recipe as directed with a couple of additions based on previous reviews. I added a good sized handful of feta and a big handful of kalamta olives. My husband raved about this salad. I think the feta and the olives added a lot of flavor, but the other magic going on here is the hot rice wilting the lettuce and sort of blending everything together. Thanks for the recipe!

Escarole and Beans

WOW! Unbelievble good and easy. I added a small can of tomato sauce -- and of course extra garlic -- and let simmer while I went for my walk. Incredible flavor. Comfort food at its best. Even better, my husband loved it too! Thanks for the recipe!

Chicken Breasts with Balsamic Vinegar and Garlic

This is a good recipe. Very fast, and what I would call a "pantry recipe" -- you're likely to have the ingredients on-hand. I wouldn't call it spectacular, but just a good easy recipe that will likely be made several more times at my house.

Beef Tenderloin With Roasted Shallots

Fantastic Black Bean Chili

Excellent recipe! I was looking around for a black bean soup recipe to make with a bag of black beans I found in the pantry. I found this recipe and had everything on hand except the ground turkey, for which I substituted ground beef. We are big chili fans, but there is something very special about this recipe. It has a very rich flavor and is extremely filling. It was excellent on the first day and even more awesome as leftover. I just finished the last of it for lunch. We will definetely be making this again. Thanks for sharing the recipe!

Cinnamon Coffee Cake II

Excellent recipe! The cake is moist and very flavorful -- and very easy to throw together. I did not have a yellow cake mix in the house, so I used a spice cake mix and vanilla for both packages of pudding. Turned out great. My coworkers devoured it in no time and were asking for the recipe. Thanks for sharing!

Turkey Posole

WOW! What a wonderful soup! So easy to make and absolutely fabulous! I made as written with the exception of the poblanos. I didn't have any, so used 4 or 5 canned chipotles instead. Did I mention this recipe is fabulous! Thanks so much for sharing, Camilla!

Awesome and Easy Creamy Corn Casserole

Absolutely amazing! I made this for Christmas dinner with my husband's family. It was a HUGE hit. They took home the leftovers and asked for the recipe. My Mom used to make a corn casserole that I have the recipe for and have sometimes made, but this one is waaaaaay better! Highly recommended. Didn't/wouldn't change a thing!

Chantal's New York Cheesecake

I'm giving this recipe 5 stars even though the crust was soggy because the cheesecake itself was incredible! Extremely smooth, rich, cheesy -- everything you want in a cheesecake. I followed the ingredient directions exactly, but then I baked it in the "no fail cheesecake method": 15 minutes at 400, turn oven down to 200 and bake 3 hours with a pan of water on the bottom shelf of the oven. When done, turn off oven and prop door open just a crack to allow to cool slowly for one hour. Then cool completely on the counter before refrigerating. This baking method will almost guarantee the perfect outcome -- no brown color on top and no cracks. Great recipe!
