Traditional Swedish Pepparkakor

Reviewed: Jan. 6, 2015
Made the recipe to the letter multiple times. Family and coworkers LOVE it (so do I!). Some prefer the harder crunchy version, some prefer the softer version, varies depending on dough thickness and cooking time. Dough is 'sandy' and tough to stick together before refrigeration and can crumble at first after you take it out of the fridge, but eventually it comes together. I've found that refrigerating it briefly is much easier than for long periods of time - 30 min at most - enough to cool it off and make it less sticky but not enough to harden it up and make it difficult to roll out. Will be making this recipe again and again. PS makes LOTS of cookies - I wouldn't be surprised if the estimate of 100 cookies was right on target.

Sausage and Bean Ragout

EXCELLENT soup. I made it pretty much to recipe and it's delicious!! Used a combo of baby spinach and kale because that's all the local mega Mart had. Was a great addition of flavor and color. Can't wait to make this again on some cold winter night!

Mini Meatloaves

Reviewed: Aug. 11, 2012
The meatloaf itself was really great - yes it was a little wet, but that just made it really moist when it came out of the oven!! I didn't like the topping that much - too sweet for my taste - will do much less brown sugar next time. Only made 7 small loaves that needed about 20 minutes, not 45. Very surprised oats worked in a meatloaf, will definitely make it again!

Bruschetta Chicken Bake

Reviewed: Mar. 11, 2012
Read the reviews before making and doubled the tomatoes and cheese as well as adding basil to the mix...it was fantastic but definitely needed the changes! Otherwise would have been 5 stars. Served over a little pasta with some bread and salad...excellent!

Best Brownies

Reviewed: Mar. 3, 2012
I made exactly as-is with the exception of adding some chocolate and white chocolate chips before baking, and wow. Really good brownies, almost more like fudge than brownies...melted in your mouth. Very sweet of course but that's fine!!

Bread Machine Challah I

Reviewed: Sep. 16, 2011
I've never made challah before, this recipe was both easy and excellent. Used the dough cycle on my bread machine, took the dough out and braided it, then let rise for an hour before putting on an egg wash and baking for 30 min. The bread is sweet and soft, very delicious. Looking forward to using it for some sandwiches and french toast!

Banana Blueberry Muffins

Reviewed: Aug. 4, 2011
Made the muffins to recipe and then wished I had read more of the reviews...these muffins are very plain and don't really taste like anything. Desperately need more flavor of some sort...more berries, more spices, more sugar...I know it's very healthy, but it would be healthier to just not eat them.

Apple Slices Brown Betty

Reviewed: Jun. 25, 2011
Sorry, didn't like this recipe. Breadcrumbs were dry and crumbly or became balls of mush when cooked. Applesauce added nothing but more mush on the top. Best part was the apples and cinnamon.

Mango Blueberry Muffins With Coconut Streusel

Reviewed: Jul. 19, 2010
Awesome, moist and delicious. I've never cooked with a mango before and this was fine to make. I'm not even a big fan of coconut and still loved these! I substituted light margarine for butter and fat free Lactaid + lemon juice for the buttermilk, muffins were still excellent and much lower in fat. With the replacements the muffins are one 3 Weight Watchers points per muffin! Yum!

Sicilian Ricotta Cheesecake

Reviewed: Apr. 24, 2010
Excellent and easy recipe. Following everyone's suggestions, I reduced by 1 egg and substituted vanilla & salt for 3 TB amaretto. Kept the cinnamon in. Consistency and taste was excellent!

Baked Tortilla Chips

Reviewed: Apr. 4, 2010
Really delicious, although I chose the lazy man's version of this recipe...cut flour tortillas into chip shapes, sprayed a cookie sheet with olive oil cooking spray, laid the chips out, sprayed the chips lightly with the cooking spray, and then dusted them with chili powder and salt (didn't have any cumin!). Mine averaged 7-10 minutes at 375 but had to keep a close eye on them. Much much better than store brand chips!

Cranberry Hootycreeks

LOVED these cookies! They're a huge favorite with the whole family! Doing 1/2 choco chips and 1/2 white chips works just as well.

Burek

Reviewed: Dec. 20, 2009
Wanted to try something new and different and this looked good! Entire family was doubtful as we were cooking it but it turned out delicious! Need a recipe for the yogurt sauce to serve with it...we tried it with a variety of toppings (honey mustard was the best!). We doubled the recipe and had a lot left over, it's very filling.
