Warning!! Make this recipe when you have gobs of company at your house. My family ate a respectable piece each, then I ate so much I had to unceremoniously put the leftovers in the garbage disposal. It's far too delicious to be left alone with me.

Cream of Fresh Asparagus Soup II

Delicious. I followed the recipe, I didn't have a full 1/2 cup of sour cream, though. It didn't matter, there wasn't a drop of soup left after dinner. Even my daughter that "doesn't eat asparagus" loved it. I saved some of the heads and steamed them in the microwave to add to the soup at the end, but it wasn't really necessary (still good, though). I'll make this again for sure.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Delicious. I modified the sauce to lower the calories/fat. I used 8oz Neufchatel cheese, 2T butter, and 1/2 can (10oz) chicken broth. It was wonderful, and my husband and son loved it.

Morning Glory Muffins I

Seriously, these muffins are awesome. I have been making them every weekend since the recipe came to my e-mail inbox. The more fruit/veg you add, the better these muffins are. I use 2 carrots, 2 apples, and 1 zucchini (I omit the raisins). I also never have apple butter, so I use unsweetened applesauce, and just 2 eggs rather than egg whites plus an egg. I also put blanched slivered almonds on top with the wheat germ, and add 1T of ground flax into the muffin mixture. Good muffins...

Sunshine Chicken

Good recipe. I used the exact ingredients for the sauce. I removed the skins, and poured the sauce over the bone-in thighs. I'm a girl with ADD, I refuse to turn and baste things every 15 minutes. I put the dish in the oven, uncovered, and baked for 55 minutes, it turned out just right. The flavor kind of reminded me of the bourbon chicken at the mall food court, and was much easier than the bourbon chicken recipe I use periodically.

Zesty Porcupine Meatballs

Lovely recipe! I made this for my mom, who has made these for several years, and she approved! I was nervous that they'd be too onion-y with the chopped onions, and onion powder (I didn't see the need for extra sodium). I doubled the recipe, and served the meatballs over rice I made with vegetable stock.

Homemade Chewy Granola Bars

This was a great recipe, and my kids loved it. They loved them straight out of the oven, and the 2 tiny ones that were left over for the next day tasted even better. I didn't have sunflower seeds, so i took a chance with ground flax meal, toasted wheat germ, whole oats, and chunky peanutbutter, i also added some chocolate chips. These were divine, and I can't wait to try them with some more variations.

Feta Cheese Turkey Burgers

Good golly Miss Molly! These were so delicious. I used 50/50 dark and light ground turkey, olives I had on hand, and I don't know how much feta cheese (I know it was less than a cup). I also added a teaspoon of bottled minced garlic and salt and pepper. I just made them for lunch, and I am fighting the urge for seconds. I also just fried them in a pan with cooking spray, absolutely lovely recipe!!

Cajun Chicken Lasagna

3 Stars, ONLY because I was unable to follow the recipe exactly. I used 1 jar of alfredo, 1 jar of marinara. I did not have any sage. It was delicious, my kids ate it, and my husband had a 2nd helping!

Portuguese Chourico and Peppers

This was delicious, I will give it 3 stars ONLY because I didn't follow the exact recipe. I didn't have any red wine, so I used a wheat ale beer. Also, I used red bell pepper instead of green. I will use this recipe again!
