Lemon Pasta Sauce

I melted the 4T butter then added 1/4 C flour and made a roux to which I added 1 C skim milk. Once it had thickened I added 1 C Chicken broth, 3 T Lemon Juice and about 1 t lemon zest. I let it cook down for about 30 min. So good!

Cheesiest Potato Soup

Excellent recipe. I made mine with Skim Milk instead of cream and it was still very good. I also like to use about 1 C cheese and 1 can of Campbell's Cheddar Cheese soup. Gives it a more restaurant-like quality for some reason.

Copycat Sprinkles Red Velvet Cupcakes

Absolutely divine! Please note this really is 30 cupcakes and not 24. I ended up overfilling some of mine because I was thinking it was just 24 servings. They were still good, just overflowing. They were very moist and the frosting is amazing. I used the milk with lemon juice as I didn't have buttermilk and it worked great.

Buttermilk Pancakes II

GREAT! I made the batter the night before. I made 1/3 the recipe and added 1 extra Tbsp Sugar and 1tsp lemon juice as suggested by another reviewer. They were crisp and buttery on the outside and moist on the inside, just the way I like them. This is a keeper.

Creamy Chicken Lasagna

I really enjoyed this. I did 3 layers of noodles instead of just 2 and also added some thawed and drained frozen chopped spinach over each cheese layer. My husband raved about it. I may incorporate the cream cheese into my standard meat lasagna.

Pesto Cheesy Chicken Rolls

These were great - I didn't bother rolling them though, just pounded the chicken out to 1/2 in thick and then put the pesto and cheese on top. I baked it covered with tin foil until the last 10 minutes. Great flavor and texture.

Toffee Chocolate Chip Cookies

I made these using a bag of Heath Candybar pieces. They got rave reviews. Note that you really need to cook them until they are turning golden brown. If you take them out too soon then the toffee does not get nice and melted.

Chicken Pot Pie IX

I cooked the chicken and vegetables in broth instead of water and added 1 diced potato. I also added a tsp of poultry seasoning, a tsp of garlic salt and some black pepper to the gravy. I cooked the bottom crust for 5 minutes before adding the filling and top crust and it turned out absolutely divine. I will be making this again.
