SO good! I actually made this with fresh chilis instead of canned and there was no problem. It was great!

Thanksgiving Meatloaf

This was amazing. Loved it. The apples in it were wonderful (I didn't have Granny Smith and it was fine anyway). My husband loved it as well.

Copycat Sprinkles Red Velvet Cupcakes

Reviewed: Sep. 2, 2010
Absolutely divine! Please note this really is 30 cupcakes and not 24. I ended up overfilling some of mine because I was thinking it was just 24 servings. They were still good, just overflowing. They were very moist and the frosting is amazing. I used the milk with lemon juice as I didn't have buttermilk and it worked great.

Zucchini Ranch Meatloaf

Reviewed: Feb. 24, 2011
I made this pretty much as written but with just turkey instead of turkey and beef. It was great and I did not have a problem with it being dry. I used a meat thermometer and mine was done in 45 minutes, not in 60.

Jack-O-Lantern Pumpkin Pancakes

These were VERY hearty. I don't think it's really something my family will go for again, but if you you like something that sticks to your ribs this is great.

Waistline-Friendly Turkey Chili

Reviewed: May 23, 2010
This was amazing and SO beautiful with the different peppers and the corn. The recipe as written would be very spicy, but I decreased some of the spices and it was great!

Chicken Pot Pie IX

Reviewed: Feb. 2, 2011
I cooked the chicken and vegetables in broth instead of water and added 1 diced potato. I also added a tsp of poultry seasoning, a tsp of garlic salt and some black pepper to the gravy. I cooked the bottom crust for 5 minutes before adding the filling and top crust and it turned out absolutely divine. I will be making this again.

This was VERY rich. We liked it, but I will probably make it with regular milk instead of evaporated milk next time.

I made this without the anchovy paste because I just didn't have any. Everyone loved it anyway and I will certainly make it again.

Toffee Chocolate Chip Cookies

Reviewed: Dec. 3, 2010
I made these using a bag of Heath Candybar pieces. They got rave reviews. Note that you really need to cook them until they are turning golden brown. If you take them out too soon then the toffee does not get nice and melted.

So Good! Moist and delicious. Made with 1/2 oil, 1/2 applesauce and topped with the crumb topping mentioned by another reviewer. I'm in love! (Crumb Topping: 1/2 c. regular oats, 1/2 c. brown sugar, 1/4 c. flour, 1/4 t. cinnamon, 1/4 c. butter.)

I melted the 4T butter then added 1/4 C flour and made a roux to which I added 1 C skim milk. Once it had thickened I added 1 C Chicken broth, 3 T Lemon Juice and about 1 t lemon zest. I let it cook down for about 30 min. So good!

Creamy Chicken Lasagna

Reviewed: Oct. 20, 2010
I really enjoyed this. I did 3 layers of noodles instead of just 2 and also added some thawed and drained frozen chopped spinach over each cheese layer. My husband raved about it. I may incorporate the cream cheese into my standard meat lasagna.
