Shrimp Lemon Pepper Linguini

This was an amazingly light dish. I subsituted the lemon with lime and omitted white wine. It still had a very beautiful, light taste.

Crispy Fish Fillets

I tried this recipe tonight for a small dinner for 2. I think it was fantastic recipe wise but try not to cook the fillets too long. I think about 1 minute each side on high, cooks the fillets to perfection!!

Oysters Rockefeller

You have no idea how FANTASTIC this recipe is. I didn't follow the measurements to TEE. I omitted the bacon bits, parsely and the anise liquor. Adding garlic butter, onion, lemon, romano and parmasean cheese. I first boiled the oysters with 1 bottle of beer and the rest with water making sure to cover the oysters entirely. I added garlic gloves and pepper corns to the pot. I used melted garlic butter, chopped spinache, onion, parma AND romano cheese with a dash of lemon juice. I then set them in the oven, broiling them on high for about 1 minute. I make this at least once a month and EVERYONE absolutely craves them!!!!

Grilled Salmon I

I first seasoned the salmon portions with salt, garlic podwer, freshly squeezed lemon juice and subsituted the Lemon peper with Club's House Lemon & Herb Mix (which contains onions, parsely, pepper, lemon shavings, etc.) I then marinated the portions for 3-4 hours (frequently stirring up the sauce) A tip, do NOT FORGET TO ADD SALT. I tested a portion without and the salt adds to the sweet & salty factor even with the soy sauce. I then wrapped the portion in foil underneath a bed of circular cut zucchini and lemon slices and baked for 10 minutes under 350. THIS WAS FANTASTIC! Paired it with some parma sprinkled asparagus and rizotto mozza/basil balls!

Spinach Stuffed Chicken Breasts

I loved this recipe! I used a spoonful of blue cheese along with some goat cheese instead of feta and added small diced red peppers. I dont exactly follow the measurements of each ingredient, more to taste. I made this for my boyfriends parents, for our first supper and they cant stop raving about it! hehe

Artichoke and Tomato Stuffed Chicken

I absolutely love stuffed chicken breast and thought this was an excellent variation! I dont follow the ingredients to the exact measurement, mostly by taste and what i prefer and it turned out FANTASTIC. the only things i added were: sun-dried tomatoes instead of fresh ones, added a little parsley and some jarred sliced eggplant in spiced oil

Seafood Stuffed Avocados

I didnt use any crabmeat, only shrimp. Used goat cheese, pine nuts and some parmasean cheese, lemon juice and everything else on the list.. FANTASTIC! the second time i made this small plate it was tasty and fresh! I used half a cucumber (diced) lots of crab meat - no shrimp, i also kept the cravings of the avocado and added salt, lemon and peper to taste along with a sprinkle of garlic powder! it was amazingly fresh and my boyfriend AND my 18 month old son DEVOURED IT!

Italian Zucchini Boats

i know a recipe that uses the same technic but with avocado. So instead of using parmasean cheese i used goat cheese, pine nuts,No chicken broth. No butter. I just mixed everything fresh and then put it in the oven for 5 minutes. at the end i put a small topping of warm roasted spicy red peppers. YUM! My whole family loved this!!!!

Roasted Mushroom Salad

I made this recipe twice. Because i wanted to make it for a potluck party. The first time i made it as instructed. The second time i made it, i added pinenuts, no mint, a sprinkle of basil, i dipped the mushrooms in balsmic vinegar, oregano and oil. And i used shitake mushrooms instead. For the dressing i didnt use any lemon but a squeeze of lime, pepper, white wine vinegar with balsmic vinegar and i roasted the red papers with garlic. Everyone loved it!!!!!!
