Cabbage Sloppy Joes

Reviewed: Jan. 3, 2012
Um, didn't have this on hand but remembered the cabbage idea. My recipe didn't look much like this so I know this review is not a lot of help. but the cabbage really DOES add a yummy crunch and sneaks a very worthy veggie in...loved it!

Blueberry Cornmeal Muffins

Reviewed: Dec. 10, 2011
OK, yes, I made minor modifications. I used about a 2/3 white whole wheat flour and a bit more salt. Oh these are yummy!! Baked the recommended time and temp, which was perfect. I was regretting not making another recipe I spied here after putting these in the oven but they are quite tasty!

This is the best yellow cake I ever made. Only change I made was about 1/4 tsp more salt. It was perfection.

Chicken and Black Bean Chili

Reviewed: Jan. 31, 2010
Delicious...like most people, I modified based on what I had and what sounded good. Used 1 c water and 2 c chicken stock as per many reviews, also cut back on tomato paste and added diced canned tomatoes as many have done. Subbed a fresh chipotle chili and dried cilantro. White pepper for cayenne. On impulse based on other chili recipes, added mustard, cocoa powder, and peanut butter. It was SO good. Served w/ tortilla chips, sharp cheddar, and sour cream.

Cranberry Oat Bars

Reviewed: Dec. 26, 2009
Addictive. I do agree, a 13x9 inch pan might have worked a bit better. I pretty much followed the recipe except pilfered a bit from Cook's Illustrated and before making topping, cut in about 1.5 tbs butter and a couple more brown sugar. I thought the amount of filling and the tartness were perfection.
