Spaghetti Squash I

So this was amazing! Of course I tweaked it. I cooked the squash in the microwave. I sauteed chicken breast, salt & pepper, olive oil, fresh basil & oregano from my garden, green pepper and used halved cherry tomatoes at the end, with a handful of fresh spinach. I didn't use olives, and wish I'd have had some feta. I sprinkled with parmesan to serve. I will never have spaghetti squash another way!

Super Easy Fruit Dip

I took other's advice and doubled the yogurt, using 16oz. of vanilla yogurt. I use fat free whipped topping. Everyone raves over this ridiculously easy recipe!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I wanted a banana bread recipe low in fat and made with whole wheat flour and found this one. Of course, I tweaked on it a bit. I omitted the oil, strawberries and applesauce, put in 1-1/2 tsp. of cinnamon instead of 1 Tbsp., then I added 3/4 C. of vanilla yogurt. I baked in a bread pan at 350 degrees for 45 minutes. My family really loved this. Very moist!

Spinach Enchiladas

Delicious! I used a bag of fresh spinach and flour tortillas, as I don't like corn tortillas and made my enchilada sauce from scratch, as it's cheap and easy to do. I may spice it up a bit next time. I served it with a salad. The family loved it!

Moroccan Chicken and Whole Grain Couscous

I only used one can of chicken broth,as the reviews said it was watery and found that to be plenty. While cooking I tasted, and had to bump up the amount of spices, also adding garlic, cilantro and pepper flakes (we like spicy). I made the dish in the afternoon, refrigerated and served that night. It thickened and had a nice flavor. My family really liked this and I'll make it again.

Chicken Enchiladas V

Delicious, but I also made a few changes. I cooked chicken breasts, which I'd sprinkled with cumin and chili powder, in a little olive oil. Covered to steam the chicken. I did eliminated step 3 altogether and didn't saute the onion etc. I simply added it raw, to the filling. I increased the sour cream, but next time may add a little milk when I pour the mixture over the top. I also put a little cheese inside each enchilada. The best change I made: Drain one can of Rotel tomatoes and add a couple of tbsp. to each enchilada. After putting the soup mixture on top, add any remaining onion and tomatoes. My family loved it!

Beer Bread I

Why buy bread when you can make this??? I don't use self-rising flour. 1 C. self rising flour = 1 C. regular flour, 1 Tbsp. baking powder and 1/2 tsp. of salt. Try a variety of wheat beers in this. The cherry wheat and the pumpkin beer make tasty variations.

Bourbon Whiskey BBQ Sauce

Amazing BBQ Sauce and I don't LIKE BBQ Sauce! The only changes I made were omitting the brown sugar, as we don't like "sweet sauce" and I used a Tbsp. of ground smoked chipotle seasoning instead of the liquid smoke. The first time I made it I didn't care for the vinegar taste and so have omitted that too. I just throw it all together and let it cook very low in a saucepan for a couple of hours. Outstanding!

Pretzel Salad

I didn't want this to be soggy so I took others' advice and let the crust cool completely. I also used fresh strawberries, as I'd think the frozen would make the crust soggy as they thaw. It was a hit! And no soggy crust!

Slow Cook Thai Chicken

This was very good, but I tweaked it a little. 1/2 tsp. of curry added a nice flavor. I added two fresh hot peppers from the garden and omitted the red pepper flakes. Since many reviewers said it was too thick, I added only 1 Tbsp. of cornstarch and used a whole can of chicken broth. Then to complete the dish, I did not put it back in the crockpot, but put it in the microwave until it got hot and reached a "just right" consistency. My husband and the kids loved it!

BLT Dip

Delicious. When I tried it again, I used 1 cup of mayo and 1 cup of sour cream. Even Better! I topped it with chopped lettuce and tomatoes and served it with toast triangles. It was a hit!
