Buttery Soft Pretzels

Fabulous! I've made these several times and they always turn out scrumptious! I followed the advice of others to use less flour and that's worked well for me. The only other change I make is to use half the amount of soda and hot water for dipping, and it's more than enough. I've also used this recipe to make pretzel rolls - it makes 12 dinner-sized or 8 large rolls. When making rolls, I stir a couple teaspoons of soda into 1/2 cup hot water. I form the rolls, place them on a parchment-lined baking sheet, and brush them with the soda water. After they've risen until double, I brush them again, sprinkle them with kosher salt, and cut a small "x" in the top of each one. I bake them at 425 degrees for 5 minutes, then turn the oven down to 350 for 10 minutes more. They look just like store-bought pretzel rolls, but taste so much better! However I make it, this recipe is a family favorite!

Ultra Yummy Breakfast Granola Bars

This turned out tasty but crumbly, and wouldn't hold together as bars. The mixture in the pan was very thick and sticky, too thick to boil. When it began to scorch on the bottom of the pan (I had it over low heat), I removed it from the stove. The thickness of it made it very difficult to distribute evenly through the toasted oat mixture. When that was finally accomplished, I pressed it into the pan and let it cool. It crumbled apart when I tried to cut it into bars, so now I have a very tasty granola. Not exactly what I had hoped for. I may try this again with coconut oil instead of coconut butter, to see if that improves things. I give it 3 stars for flavor.

Lemon Poppy Seed Shortbread

The combination of melt-in-your mouth shortbread and lemon make these exceptional! I added 1 tsp. of lemon zest, a teaspoon of vanilla, and 1/4 tsp. of salt - my family prefers a little salt. The dough was soft, but not difficult to work with. It was easy to shape the circles by hand, so I didn't bother using a rolling pin. I'll definitely make these again!
