So, over the last week or so I have been very interested in cooking.  I'm not sure why; however, not to question - just going with it :-)

I decided to first try homemade Amish Potato Salad found on here.  I was really nervous, seeing as my husband is SO picky of this type of potato salad and I just really wanted to impress him (seeing as how I couldn't even boil eggs when he met me 5 1/2 years ago!) - so I tried...  How did it come out you ask?  Wonderful!!!  Oh my I was so proud of myself.  I couldn't believe how wonderful it was.  I substituted a few ingredients with what I had around the house and it came out even better than I thought it would!!  It was gone within a day and that was 5lbs of potatos!  After that, it gave me confidence.  I tried Cajun Creamy Chicken and Pasata after that - another hit!  Then I tried homemade Oatmeal Lace Cookies, Peanut Butter Chewy Chocolate Cookies, followed by Ham N Cheese Bake, Sauteed Apples and then for tonight, Chicken Potato Casserole.... wow.  I couldn't believe everything came off perfect!

So, in short, how proud of myself I am :-)  I tried and conquered.  I really didn't think I could do it but I did!!!

Thanks Allrecipes.com :-) You made another cook!

Hi! and Welcome! I think this time of year inspires those of us who are "culinarily challenged" to start experimenting. My biggest challenge is sticking to a recipe (I always wonder, "What would happen if I added ....?"), but I made my hubby a solemn promise to always try a recipe as written before changing it, and this site is great for that. I get a kick out of reading the reviews, but I try to stick to the recipe as written -- first. Hubby is the pickiest eater I've ever met so when he likes something, I know it's good -- and it goes into my growing repetoire. It's a little frustrating as he likes "the simpler the better" and I am always looking for "fun and exciting to make. Tasting good is an added plus!" In my first few months here in AllRecipes, I have learned that confidence and love are two of the most important ingredients in any recipe. I am still a beginner "cook" (probably always will be), but I am now happy to be one. :D Welcome!
