Easy Cajun Grilled Veggies

I omitted the cayenne pepper and used blackened seasoning instead of cajun. Marinated over night and was very good.

Potato Chips

These are really good. Takes a little tweaking with different microwaves but that is common sense to most. The only problem I had is making them fast enough for my large family!

Jim's Salmon Patties

These are great. I like using crackers instead of bread crumbs because to me it is a better texture.

Quick Yeast Rolls

Reviewed: Aug. 11, 2013
Very happy with this simple bread. Approx. 2 1/2 hours from start to finish. I used butter instead of shortening and a cake pan rather than muffin pan. They spread together on cake pan, tasted awesome. Thank you for recipe!

These were edible but honestly I would not make them again. I did not like the texture at all.

Corn Fritters

Made enough for a family of 6 with dinner. Everyone liked them. I didnt really measure but I put in about a tablespoon of sugar and made half the batter as listed and then added jalepeno peppers to the second half.

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Jul. 18, 2013
This recipe went over very well with my family of six. I felt like baking them so I sprayed the cookie sheet and lightly brushed the chimichangas with olive oil before crisping in the oven. BTW, it took about an hour to reduce down the sauce but to me it was worth it. I also doubled the sour cream sauce because we LOVE sauce. Thank you for the recipe!

Southwest Dipping Sauce

Reviewed: Jul. 17, 2013
Would have given 5 stars but after one tablespoon of horseradish, it had enough. Two tablespoons would be overkill to us. I mixed up all ingredients and saved adding horseradish to the last step to adjust and I am glad I did. It would have been ruined to me otherwise.

BLT Pasta Salad

Reviewed: Jul. 17, 2013
I don't understand why we didn't LOVE this recipe. We LOVE everything in it! I followed instructions, Hidden Valley Ranch dressing, fresh cooked bacon, even added cheese but it just didn't have extra zing we love. I am thinking that making the Hidden Valley Fresh Ranch from the packets with buttermilk would probably give this extra flavor.

Monkey Bread I

Reviewed: Jul. 17, 2013
My kids thought it was great. For me although a cake pan would not come out of the oven as impressive as a bundt pan version, I will use it next time because I didn't like that the brown sugar/butter sauce didn't seep down between the bread because it was so deep. Plus it takes a long time to cook when it is so thick.

Asian Ginger Dressing

Reviewed: Jul. 15, 2013
I followed the recipe with the exception of I used sesame and olive oil mix as suggested by other reviewers. We really didn't enjoy this dressing. It is very thin like water and left us feeling it was flavorful but missing something. Keep in mind this makes a lot of dressing, especially if you don't end up liking the flavor.

Shoyu Chicken

Reviewed: Jul. 9, 2013
I marinated this overnight and then with a little olive oil browned the chicken then added the rest of the marinade and cooked slowly until tender and done. Luckily for me I omitted the hot pepper flakes and used less cayenne pepper than called for and to us it was so flavorful but still a little too hot. Could be because I marinated it so long. Next time I will add even less cayenne. It is a very good recipe, thanks for sharing!

Cream Cheese Frosting II

Reviewed: Jan. 13, 2010
So easy and taste so good on about anything that needs frosted. As other post say, you can eat it with a spoon, it is yummy but not overly sweet. I have made it a few times and each time great. I always seem to forget to set the cram cheese and butter out so I toss them in a bowl and microwave them for 15-20ish seconds and then it blends perfect. Enjoy! Thank you for the recipe!
