Sean's Falafel and Cucumber Sauce

These were excellent!! After reading other reviews I modified slightly by adding 2 eggs rather than one, and leaving out the baking powder (didn't seem to be a common ingredient in other recipes). I also didn't puree the onion, garlic, and parsley as I like a bit of texture (okay I was lazy and didn't want to take out the food processor for such a small thing).

Bread Pudding III

This was my first time making bread pudding and I thought it was greatly benefited from first rum-soaking (actually Kahlua soaking) the white raisins first. Great addition to an already great recipe!

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

I've made this twice now, and will for sure make it again. Regular feta worked just fine, with a bit of italian seasoning (as suggested by a previous reviewer). This was my first time cooking with Phyllo, and will definitely not be my last.

Kalamata Olive Tapenade

I followed the directions exactly, and was very happy with the results! I don't think it was too strong, in fact my 4-year-old could hardly stay away from it. The tapenade was wonderful paired with hummus and pita bread.

Krissy's Best Ever Corn Muffins

Followed the recipe exactly, only I used canned (drained) corn instead of frozen. These were a HUGE hit in our family. I love that slight honey taste (as we always put honey on our corn bread anyway, this way it is baked right in). Definitely a bit sweet, but we like it like that.
