Beef Tenderloin With Roasted Shallots

Fantastic!! I just made this for New Year's and it was a real hit. I accidentally bought maple bacon, but used it anyway and it was great. I also did the same as another reviewer and used a cabernet with a little brown sugar instead of port. I would definitely make this again, and all my guests would agree.

Best Ever Shrimp Dip

This won rave reviews at my New Year's party, but it wouldn't have without a few alterations I made. I added a tsp of fresh dill weed, about a 1/2 tsp lemon juice, and salt and pepper to taste. I served it inside cucumber cups. What a hit!

Dynamite Halibut

I wasn't a big fan. It was ok, but I would not make it again. Prefer just grilling or pan frying the fish. I will say though that i made it with half Halibut and half Sea bass. I like it with the sea bass much better.
