Emily's Famous Hash Browns

These were pretty good, but the cooking time you give is too long. for me, it took more like 3-4 minutes a side and turned out too brown. I also think it needs some seasoning added, but as a good general set of instructions for how to cook hash browns, it worked for me.

Creamed Chicken over Beans

This was extremely good! It reminded me of one of my favorite after Thanksgiving meals, when mom would cook the turkey in the gravy and serve it over toast or mashed potatoes. I didn't have bullion, so I used chicken broth in exchange for the water- it worked great. Actually, I think I probably prefer it that way.

Whole Wheat Honey Bread

My husband said "This is the best bread you've made yet." I don't like the shape of bread in the breadmaker, so I used the dough setting and broke it out into smaller loaves before baking. The dough seemed very wet but the end product was soft and delicious! I used more milk powder than I was meant to (some spilled...) but otherwise followed the recipe exactly.

Homesteader Cornbread

This was very tasty! I was looking for a light corn bread that my cornbread-hating husband might like- he hasn't tried it yet, but I like it. I used white whole wheat flour instead of all-purpose, and brown sugar instead of white. Then I covered it with butter and honey and ate it all by itself. Yum!

Pineapple Orange Pancakes

These were pretty good. The batter came out too thick as written, so I needed to add more liquid. I wish I had had orange juice in the house so I could have tried the original version, but I only had pineapple juice. I think the orange would have added some more tanginess to them.

Teriyaki Marinated Chicken

This was fantastic! I took the suggestion of some other posters and used fresh garlic, ginger, and some sesame oil. I also threw some canned pineapple chunks in the marinade and under the broiler with the chicken. They turned out delicious!

Honey Banana Muffins

These are great! I was looking for some way to use up a couple of overripe bananas, and this recipe was perfect. Modifications- I used a mixture of whole wheat and whole wheat pastry flour, and eliminated the white flour. I used cinnamon applesauce because that's what I have. And I didn't have quite enough banana, so I added some carrot puree- which turned out great. I was concerned about the low amount of spice, but these turned out flavorful enough. If I didn't have cinnamon applesauce, though, I'd have probably wanted more spices. When warm, I didn't even feel the need to butter the muffins, which is pretty good for a fat free muffin! We'll see how they do when they cool down.
