Double Chocolate Cherry Muffins

Reviewed: Jul. 22, 2014
All 4 of my kids (ages 9-15) loved these and wanted them again, and this almost never happens at my house. I have a rule that breakfast muffins must contain at least one fruit or vegetable -- trying to get the kids to explore healthier options -- and even my pickiest eater who allegedly hates cherries said that the taste of chocolate made them ok. My only change was to reduce the serving size for a younger audience from jumbo to regular muffin cups (I got 18 regular muffins, bake time 20 minutes) and add a teaspoon of vanilla because they usually like that. Like a couple other reviewers I am not a chocolate cherry fan myself but if I were, this would be my new favorite recipe and you can't beat a recipe that tweens/teens will eat reliably. Busy mom warning -- cherry pitting and chopping is a bit time consuming, wait til the kids are asleep or otherwise occupied because it's hard to break away when you are covered in juice. Thanks for the recipe!

Basic Corn Muffins

This has been my go-to recipe for about a year now. Kids and adults like them, I'm crazy about them too. A very solid, convenient, tasty recipe that I had been looking for and am glad to have found. I make the recipe as written.

Frosted Banana Bars

Reviewed: Apr. 28, 2014
Really terrific bars, made recipe as written but without frosting, weighed ingredients for accuracy, used a 10x15 jellyroll pan, no bad comments from a class of 7th graders or their teachers, kids who said they didn't like banana bread were converted. Did not feel the frosting was necessary and I am not sure we would have liked them frosted. They are plenty dense and rich on their own, why gild the lily? But if you do like a very very sweet heavy bar, agree with others that homemade cream cheese frosting is a must -- grocery store icing always has an aftertaste and it's not hard to make the icing from scratch. Plenty of good icing recipes on this site.

Layered Peppermint Bark

Reviewed: Dec. 24, 2013
I am making this for the 5th Xmas eve in a row, exactly as written. Each year my technique impoves and the original recipe makes more sense. The only thing I still need to perfect is my timing -- I am getting so speedy that I had the 2nd layer melted before the first was cooled. But after 5 years it's time to say thanks for a great recipe! My kids help me make this, it is relatively simple and they can all contribute (my 8 year old just unwrapped and smashed the peppermints). We all look forward to seeing this recipe on our cookie tray, thank you carol!

Zucchini Yogurt Multigrain Muffins

Reviewed: Sep. 27, 2011
All four of my kids ate these including the two who hate fruits and veggies, thanks CARINAB! I could not find oat flour at the store so I ground oatmeal in my dry Vitamix (high speed) blender and that worked fine. I tried a couple alterations and decided that this recipe works best as written.
