Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

This is delicious!! I made it more or less according to the recipe - I rarely measure anything, especially when it comes to chili, soup, etc. I did use my own homemade salsa instead of commercial, because that's what was on hand, and added a bottle of Dos Equis Amber beer. It took no time to load the slow cooker. After ladling into my bowl, I topped it with ff sour cream - oh, so good!! Hubby used a Mexican blend of cheeses on his, and was "m'mming" all the way to the bottom of his bowl! He usually takes leftovers for his lunch, but I cooked something else for him so that I could have them to myself!!! This dish is now on my recipe rotation - thanks so much!

Pumpkin Chip Drops

I substituted fresh cooked, mashed sweet potatoes, Splenda sugar and Splenda brown sugar, and baked in an 8"X8" pan. They came out of the oven just as my husband came home from work. There were none left for dessert!

Crab Swiss Bites

I found this while looking for Low Carb recipes I eliminated the dinner rolls and baked the crab mixture in ramekins. It was delicious and even lower in carbs!

Good 100% Whole Wheat Bread

I grind my own red wheat for breads and such. It is well to note that freshly ground wheat flour doesn't have any of the preservatives that flours bought in the grocery usually do. Even with the preservatives, flour can go rancid, so it's best kept in the refrigerator or freezer. Make sure to let any flour come to room temperature before using in recipes. Also make sure you take the temperature of the water or liquid you use with any recipe that calls for yeast - to hot or too cold and you won't get optimum results. And note the expiration date on yeast! This is a great recipe that, if the above precautions are taken, turns out good every time.

Mediterranean Summer Tomatoes

This is delicious, and one of my summertime favorites! Since I'm watching my weight I alter this recipe a bit by adding layers thinly sliced mozzarella cheese for protein, then top with sliced black olives and fresh basil, finely minced. I also cut back quite a bit on the olive oil, or omit it entirely, and used multigrain or whole wheat bread. This makes it a meal instead of a side dish. Oh, and I don't refrigerate the tomatoes - ever - it changes both the taste and the consistency!

Apple Toast

Tomato Bisque II

I tried this recipe and it is delicious with only one change - I added fresh basil rather than dried. I suppose using canned tomatoes would be okay, but using fresh tomatoes is preferred, hands down! I would like to know how it is canned - with a pressure canner (at what pressure and how long for pints) or water bath canner.
