Very Simple Spelt Bread
SOOOO Disappointed! Looks like the perfect option for gluten free/alkaline diet. Tried this 3 times and a failure each time. I'm pretty good in the kitchen, and all good reviews said it was a very "forgiving" recipe to make changes to so I did tweak it the first 2 x. Then with the final effort, stuck to the recipe except doubled the baking soda, and every loaf was an inedible brick. My baking soda is fresh and works fine with my biscuits and other things so don't think that is the problem. I now have more bread crumbs than I will need for a long time. this last batch I will chunk up and dry out for dog biscuits. I truly wish I could say something good about my experience with this recipe but I can't.

Mom's Zucchini Bread
Excellent base and delish as is. Sugar as is ok, but 1/4 less might be better. No need to half it w/brown IF you use 1tsp maple extract--good anytime you want flavor of brown sugar-- might be cheaper in the long run, so I always keep it around. Even a little orange extract is tasty. Pecans are also good to and even no nuts at all good--I have enjoyed it with part whole wheat flour, some oat meal and/or some flax seeds. It would be very easy to just write up a new recipe with any combination of those items. Saw another I'll try soon by adding blueberries. Just have a blast with those Zs!

Cod with Italian Crumb Topping
delicious. I used my low carb bread crumbs, left out the corn meal, pan fried it almost to completion then spooned a bit of parmesean over the tops, turned off the heat and covered with lid for a bit. Was faster, yummy and didn't have to heat up the house with the oven.
