Blueberry Breakfast Cake

I used almond milk instead of regular milk and added in a little extra lemon extract and some salt as others had suggested. I think next time I will try it with butter milk and maybe use 1/2 a cu instead of 1/4 as the batter was extremely dense. I also tossed the blueberries in a little bit of flour before adding to the batter so they don't all sink to the bottom during baking.

Pumpkin Pie Squares

This is an excellent pumpkin dessert and a nice alternative to a pie. My cooking time with the filling was approximately 40 minutes instead of 20.

Bavarian Pork Roast

I will rate this with 5 stars because it is exactly what I remember my grandma making as a child. I did make some tweeks for my family. Used pork tenderloin instead, used veg broth instead of the beer, omitted the salt and did not make the gravy. I served it with homemade applesauce, sauteed chard w/cider vinegar and roasted acorn squash w/maple syrup glaze. Great menu for a fall day!

Vegetarian Kale Soup

This is a great basic recipe for soup. A couple of adjustments I made were to add browned hot sausage, really adds to the flavor. Also, I do not like bouillion cubes, too salty for us. I use the boxed low sodium vegetable broth.

Mayo-Free Potato Salad

This is a great recipe as but I did need to make a couple of changes. To reduce the sodium, I only used one pickle and instead of the pickle juice, I used vinegar. My family does not like cilantro so I used a combo of fresh parskey, basil and thyme for the herbs. A great picnic friendly recipe since it needs no refrigeration.

Blueberry Zucchini Bread

This is an excellent recipe. I did alter it a bit hoever, only added 1.5 c of sugar, 1 1/2 c of white flour and 1 1/2 c of whole wheat flour. I also added the zest of a lemon. I think next time I will reduce the sugar to a cup and split the oil to half oil and half applesauce. Will also probably add some walnuts.

Blueberry-Lemon Pound Cake

Great cake and right amount of moistness. I like my lemon desserts really lemony so I used the zest of two lemons. I floured the blueberries as another reviewer also suggested. I added a little salt since I use unsalted butter.. I added a lemon glaze as well. With all these little adjustments this cake would warrent 5 stars!
