Tiramisu II

Delicious!! I've had this recipe in my recipe box for months, just waiting for a reason to make it and Christmas was the occasion I was looking for. I made it 2 and a half days in advance per reviewers' suggestions and it turned out perfect- just as good, if not better than at my favorite restaurant. I found the mascarpone cheese in the deli's section of imported cheeses at my local grocery store and used the "hard" lady fingers since that was all I could find. I was nervous about using those after reading multiple reviews saying to only use the soft ones but they are wrong! The hard lady fingers soaked up the coffee/liquor mixture and turned very soft (even the parts that weren't soggy were soft). Everyone loved this dessert and it was much easier to make than I expected. I also made it in a trifle dish and it turned out really pretty.

Thanksgiving Cheese Ball

Excellent flavor! I made this exactly according to the recipe and it was a huge hit at our Thanksgiving get-together. The guys gobbled it up while watching football. We love blue cheese and the flavor was just enough to be bold without overpowering the entire thing. We served it as a spread but it would have easily made a ball if I'd wanted to. Will definitely be making this many more times!

Blue Cheese and Dried Cranberry Tossed Salad

Whenever I try to make a salad on my own, the flavors don't seem to blend well so I decided to try following a recipe and this one was great. I just left out the cucumber- it's easy to add or leave out ingredients to your taste, but the nuts, cranberries and blue cheese made an excellent combination. The balsamic vinaigrette dressing is a must for a perfect salad. I made it for christmas dinner and everyone raved about it!

Banana Sour Cream Bread

I have used the EBNB (extreme banana nut bread) recipe from this site for years but I tried something different this Mother's day and all I can say is "Wow!" This is a far superior recipe for a much more moist bread. Dusting the pans with cinnamon sugar made a delicious difference. The only thing I did differently was that I used 2 cups brown sugar and 1 cup white as we prefer the taste of brown sugar in a banana bread. Simply amazing!! I made 2 larger loaves (9×4?) and had to bake them at 325 for nearly an hour and a half but they could not have turned out better!

Heavenly Potatoes and Ham

Delicious! I followed a reviewer's advice and used half the amount of potatoes but the casserole ended up pretty runny and too buttery. I will try it next time with the correct amount of potatoes. Otherwise the flavor is excellent and would probably be just as good with half the butter called for in the recipe. Only thing I added was some garlic powder.

Stir-Fried Steak and Veggies

This was my first attempt at a stir-fry and it was gobbled up by my fiance as well as the kids (that's impressive)! We substituted chicken and I love how versatile this recipe is- the sauce really makes it and you can put whatever meat/veggies you like into it. We decided to sub squash for the carrots next time. I was afraid the sauce would be too sweet and spicy (brown sugar and chili powder had me a little worried- didn't sound like something I'd like) but it was delicious- a hint of spiciness in the background but I hate spicy food and this was good to me. Everyone said it tasted like something you could get at panda express (my fiance's favorite place). We will be making this fairly frequently now, I'm sure. Oh- I did double the sauce part of the recipe since the fiance loves sauce on everything, but we also probably had a bit more meat/veggies than the recipe called for- it came out perfect for adding a little sauce on the rice.

Heart Attack Eggs

This was the only way I'd ever eaten a fried egg until I was in my mid-twenties. I thought everyone did it! It wasn't until a friend who stayed over for breakfast asked me to cook hers in butter and I had no idea what she was talking about or how to cook an egg in butter that I realized this wasn't the "norm". We also scramble eggs in a little of the bacon drippings for extra flavor. You can also use sausage grease if you've cooked sausage links or patties for breakfast for a great flavor.

Roast Sticky Chicken-Rotisserie Style

If I could give this 10 stars, I would! I love rotisserie chickens, but this was 10 times better than any other chicken I've ever eaten. In the words of my 5 year old son, "it's perfect!". I followed the directions except used fresh minced garlic cloves inside and outside the chicken, and omitted the paprika and white pepper (since I didn't have those on hand). The skin was crisp and golden, the meat was beyond tender and so moist. I bought a bird with the little thermometer already in it and cooked at 250 until it popped up (right around the 4.5 hour mark). I used the drippings as is over mashed potatoes and it was to die for :) So easy too- this will definately go into our regular dinner rotation!

Breakfast Pie

I doubled the recipe and made it in a casserole dish for Christmas morning. The only thing I did different was skipping the cornflake topping since I thought bacon was enough on top. I thought it was just "ok" but my fiance and children were not impressed at all. The flavor was very bland, and the casserole was also pretty dry. No one went back for seconds or ate leftovers. I've had many better breakfast casseroles and will not be cooking this one again.

Garlic Prime Rib

I had never cooked prime rib before and was a little nervous, but this recipe made it easy and fool-proof! My fiance (who is a butcher and very critical of any meat I cook) was very impressed with this recipe. I followed the directions exactly and cooked until internal temp of 140, it came out very tender, perfectly medium rare and the garlic flavor went all through the meat. This easy garlic rub would also be great for any other type of roast.

Salisbury Steak

Delicious!! I followed some of the reviewers' advice and kind of changed the sauce- used the ketchup, flour and worcestershire sauce as well as a good bit of water and a pack of beefy onion soup mix and a jar of beef gravy. Came out so great- even the kids raved over it. Will definitely be making this again :)

Country Apple Dumplings

These were okay.. they were swimming in the sauce though and way too sweet for my taste. I made them once months ago and never made them again if that says anything. I'd rather do a fruit cobbler any day- much easier and faster.

Extreme Banana Nut Bread 'EBNB'

I use this recipe for my holiday baking as gifts and it is an excellent banana nut bread- very dense and flavorful. I, personally, would like it better if it was a little softer or maybe moister- but the recipe is still great and I haven't found a better one yet!
