Lemon Cream Pasta with Chicken

mmmm this was yummy! I used 1 cup almond milk instead of cream, since I try to avoid dairy and want to eat healthier, and it still came out really good. I also used whole wheat rotini and it was great! I can only imagine how good it would be with the cream! I also added 1 pack of sliced mushrooms, and next time I think I will add another pack (2 packs total) and maybe some baby spinach for some color and an onion for more flavor. I also followed someone elses suggestion and instead of baking the chicken in the oven, I cubed it and sauteed it with the lemon juice, pepper, and garlic powder. mmmm, this was so good and I will definitely be making it again!!

Tomato Pie I

This was GREAT! One pie fed 4 people, but they could have ate more and thought it was sooo good!! I doubled the receipe and made 2 pies, since it wasnt that much more work to make another pie, and plan on eating it tomorrow for lunch with a salad. yummy! This was a great way for me to use the abundance of basil from my garden! I will definitely make this again!

Andrea's Pasta Fagioli

This was really easy to make, with simple ingredients, and tasted great! I followed the recipe exactly, except I didn't have tomato sauce, so I used a 6 ounce can of tomato paste, 12 ounces of water, and a 15 oz can of diced tomatoes. I also used chicken broth instead of the 5 1/2 cups water to give it some more flavor. mmmm, it was sooo yummy and satisfying. My bf who complains whenever I make soup for dinner ate 3 bowls and said it was so good. I cooked the pasta separately so it wouldn't absorb too much liquid and get mushy, and just added a scoop of pasta to a bowl and then the soup over it. Will make this again for sure!

Best Ever Banana Bread

Delicious! I cut the sugar to 1 cup brown sugar (and even then it was sweet! Next time I will do 3/4 cup) added 1 tsp vanilla and 1 tsp cinnamon. Didn't have pecans, so didn't use it, but next time I will add walnuts because I like walnuts in my banana bread. I mashed 3 very ripe (on the verge of rotten! haha!) and because I couldn't find my loaf pan, I made 12 muffins and baked for 30 minutes. perfect and delicious and will make again!

Hearty Vegetable Lasagna

This was delicious! I did change it, but this is a good base. I'm always trying to make things healthier, so this is what I did: 1. Used part skim mozzarella cheese 2. Replaced all of the ricotta with organic low-fat cottage cheese 3. Made my own homemade sauce (the jarred sauces have a lot of sugar) Sauce: 5 cans organic diced tomatoes, 1/2 cup fresh basil, 2 tablespoons fresh oregano,(can used dried herbs if you don't have fresh) 1 cup carrots, 1/2 cup dry white wine, and 1 tablespoon brown sugar) 4. Put 6 cloves of garlic instead of 3. Good and will make it again! Next time I will add a little more veggies...maybe one zuchinni and another bell pepper. It was so good that between 6 adults we finished it off in one sitting!

Wicked Garlic Tofu Saute

mmmm sooo yummy and easy! I didn't want to use frozen veggies, so I used whatever I had on hand (I already had 1/2 roasted cauliflower that I threw in), as well as one onion, 2 carrots, and a bell pepper. It was good and would be good with whatever veggies you have on hand. I could see using mushrooms, snow peas, broccoli, or whatever you would like. Cooked the tofu and set aside and then sauteed the veggies w/ the chicken broth and covered, letting them cook, then when they were almost done added the oyster sauce.

Broccoli Soup

yum! this was sooo simple and good! I used two fresh broccoli heads and added 2 extra garlic cloves and one more cup of stock. I didn't have potato on had, so I used 1 tablespoon instant mashed potatoes. This was really good! Very comforting and delicious, not to mention healthy! I will be making this again.

Janet's Rich Banana Bread

This was sooo good! Everyone who ate it raved about it and asked if they could take some home! Next time I am going to double the recipe. The only changes I made was used strawberry banana yogurt instead of sour cream, and added 1 tsp. baking powder and 1 tsp. cinnamon. This was sooooo moist and full of flavor. This will be my go-to banana bread from now on!

Creamy Potato Leek Soup II

This is such an easy and really tasty potato soup! yum! everyone loved it! To make it healthier, I used low fat milk instead of heavy cream, and used half a package of bacon instead of the whole package. I also used an onion instead of leeks and sauteed about 2-3 cloves of garlic along with the onion. Sprinkled shredded chedder cheese on top and it was sooo delicious! Will definitely be making this again, soon!

Easy Tuna Casserole

This was really good! I used a whole package (lb) of whole wheat egg noddles, 2 cans of cream of chicken, 1 can of cream of mushroom, a can of milk, and a can of peas. It was yummy! It fed 5 adults with no leftovers. Everyone loved it. This will be my go-to tuna noodle casserole from here on!

Baked Salmon II

Family loved it. It came out soooo moist and flavorful! I even left the skin on and it did not taste fishy at all. Will be making this again and again! So easy and very little mess! EDIT: I made this again tonight, but didnt marinate the salmon because I didnt have time, just put the salmon in a glass casserole dish and then threw all the ingredients on top and WOW so good and easy! BF said it was better than any salmon at a restaurant!

Homemade Black Bean Veggie Burgers

These were delicious and received rave reviews!! Everyone thought they were delicious! They definitely taste like a veggie burger, but so good. I used 5 cloves of garlic, 1 egg and flaxseed/water in place of another egg, omitted the hot sauce, and used 3/4 cup panko bread crumbs. I threw it on the stove for a few minutes so it got really crispy before serving. This is incredibly healthy, not to mention super cheap!!! Everything cost less than $5 and fed 4 people.

Blueberry Flax Pancakes

These were really good! I was a little worried, as they looked rather dense and not so good, but YUMMY!!! mmm, VERY fluffy and even better than traditional pancakes. I topped w/ sliced strawberries and syrup. I followed the recipe exactly, but next time I will double the blueberries, as there wasn't enough. Mine made 6 pancakes.

This was SO good! Everyone loved it! I love that it was a one pot dish and so easy to make and very healthy as well! I doubled the barley to one cup, used 6 cups of chicken broth and 4 cups of water and added a little salt. It was delicious!

Mediterranean Salmon

This was aaaamazing! I read other reviews and didn't use the cilantro, and instead replaced it with rosemary. I used 1.5 lbs fresh wild salmon, 1/2 cup oil, 1/4 cup balsamic vinegar, 8 garlic cloves minced, 2 tsp garlic salt, generous amount (over 2 tablespoons) basil and fresh rosemary (I just cut several pieces rosemary from the plant with stem attached, washed well, and placed it over salmon). Placed everything in a glass dish and marinated for a few minutes, then popped into the oven. Very easy, healthy, and delicous! I served it with brown rice, sauteed garlic spinach and some sauteeed mushrooms as sides. My bf raved about how good the salmon was. The rosemary really does make a difference.

Tuna Noodle Casserole II

mmm this was yummy! I used whole wheat noodles, an entire can of evaporated milk, and also added a package of mushrooms and an extra 5 oz can of tuna. Next time I will add another package of mushrooms (one pound total) and double the onion. I sauteed the onion/mushrooms before adding to the casserole. Next time I will also add another can of tuna (so, 15 ounces total). Carrots might be good in it too. All in all, a keeper!

Pollo Fajitas

Had this for dinner tonight and it was SO good! I used boneless skinless chicken breast instead of thighs since I don't like thighs, and upped the garlic to 4 cloves and bell pepper to 1 and a 1/2 bell peppers. I was a little worried to add 1/2 a lemon at the end, but it really brought out the flavors. I served it with a salad (weird, I know, but I try to eat a big salad before or with each dinner) and with homemade guacamole. The guacamole is a MUST! It gives a nice creaminess to the fajitas. Overall, a very simple, healthy dinner that I will be adding to my rotation.

Easy Hummus

This was super easy and so delicious! I will NEVER buy store bought again! This is definitely a great base recipe. I added oil and the entire bean liquid because I like my hummus not so thick. I also added paprika. Yum! This is definitely a keeper!
