Hearty Vegetable Lasagna

This was delicious! I did change it, but this is a good base. I'm always trying to make things healthier, so this is what I did: 1. Used part skim mozzarella cheese 2. Replaced all of the ricotta with organic low-fat cottage cheese 3. Made my own homemade sauce (the jarred sauces have a lot of sugar) Sauce: 5 cans organic diced tomatoes, 1/2 cup fresh basil, 2 tablespoons fresh oregano,(can used dried herbs if you don't have fresh) 1 cup carrots, 1/2 cup dry white wine, and 1 tablespoon brown sugar) 4. Put 6 cloves of garlic instead of 3. Good and will make it again! Next time I will add a little more veggies...maybe one zuchinni and another bell pepper. It was so good that between 6 adults we finished it off in one sitting!

Pasta Primavera with Smoked Gouda

I really didn't like this recipe and neither did my BF. I don't know what it was about it that I didn't like...but it was sort of bland and not really liking the smoked gouda flavor. It made a HUGE pot too and feel bad throwing it away, so will try to give it away to friends or family in hopes of someone liking it.

Bell Peppers and Pasta

I would give this a 3.5 if I could. It was really easy, relatively healthy, and good, but just a little plain/bland. I'm not complaining, everything got eaten, but it wasn't a wow dish. I added an extra cup of bell peppers doubled the olives, and added dried basil and Italian seasoning in addition to the oregano. I would make this again for a quick weeknight meal since I usually have all the ingredients on hand.

Blueberry Flax Pancakes

These were really good! I was a little worried, as they looked rather dense and not so good, but YUMMY!!! mmm, VERY fluffy and even better than traditional pancakes. I topped w/ sliced strawberries and syrup. I followed the recipe exactly, but next time I will double the blueberries, as there wasn't enough. Mine made 6 pancakes.

Best Ever Banana Bread

Delicious! I cut the sugar to 1 cup brown sugar (and even then it was sweet! Next time I will do 3/4 cup) added 1 tsp vanilla and 1 tsp cinnamon. Didn't have pecans, so didn't use it, but next time I will add walnuts because I like walnuts in my banana bread. I mashed 3 very ripe (on the verge of rotten! haha!) and because I couldn't find my loaf pan, I made 12 muffins and baked for 30 minutes. perfect and delicious and will make again!

Low-Fat Broccoli Soup

This was good and comforting. I doubled the recipe and it fed 5 adults. I added 4 cloves of garlic, an extra 1/2 cup of broccoli, and a teaspoon each of parsley, basil and oregano. everyone liked it!

Garbanzo Tomato Pasta Soup

This was good and a very healthy meal! I didn't exactly follow the recipe though but the recipe was a great base to add on to. Instead of the pasta I added brown rice and I also added potatoes. I added a little more than half a can of tomato paste and I was generous with the spices and added 1 tsp. oregano. In addition to what the recipe called for, I added about 1 cup of celery, a can of corn, and about 5 carrots. It was yummy! I will definitely make this again! Next time I will add green beans and maybe throw in cabbage. This soup is wonderful because you really can add whatever you have in your fridge that you want to use up!

Wicked Garlic Tofu Saute

mmmm sooo yummy and easy! I didn't want to use frozen veggies, so I used whatever I had on hand (I already had 1/2 roasted cauliflower that I threw in), as well as one onion, 2 carrots, and a bell pepper. It was good and would be good with whatever veggies you have on hand. I could see using mushrooms, snow peas, broccoli, or whatever you would like. Cooked the tofu and set aside and then sauteed the veggies w/ the chicken broth and covered, letting them cook, then when they were almost done added the oyster sauce.

Best of Everything Veggie Burgers

I didn't care for this at all. the flavor was okay, but the texture was mush. I even added extra breadcrumbs and fried the patties after taking them out of the over, but they were still too soft and completely fell apart. No one liked them, except my bf, who will eat anything! Would definitely NOT make these again!

Tuna Noodle Casserole II

mmm this was yummy! I used whole wheat noodles, an entire can of evaporated milk, and also added a package of mushrooms and an extra 5 oz can of tuna. Next time I will add another package of mushrooms (one pound total) and double the onion. I sauteed the onion/mushrooms before adding to the casserole. Next time I will also add another can of tuna (so, 15 ounces total). Carrots might be good in it too. All in all, a keeper!

Asian Beef with Snow Peas

this was good! I will make this again, the marinade had such such good flavor. For veggies I added one onion, 2 small green bell peppers and 1 very large brocoli crown and it was perfect! this would be good with whatever veggies you have on hand. served with brown rice and a side of sauteed garlic bok choy and it was a healthy, filling, satisfying meal!

Broccoli Soup

yum! this was sooo simple and good! I used two fresh broccoli heads and added 2 extra garlic cloves and one more cup of stock. I didn't have potato on had, so I used 1 tablespoon instant mashed potatoes. This was really good! Very comforting and delicious, not to mention healthy! I will be making this again.

Irish Chicken and Dumplings

This was okay. Easy, but overall takes along time. Bf raved about it, but no one else really seemed to love it. Edible, but will not make again, or if I do, I won't be adding dumplings..maybe make biscuits on the side.

Blueberry, Banana, and Peanut Butter Smoothie

This is really tasty andvery filling. It's definitely not one of those smoothies you can chug down. I doubled the flaxseed and it tasted fine. I omitted the honey and yogurt and it was still really sweet and thick. The key is to use a ripe banana

Roasted Herb Chicken and Potatoes

This was surprisingly REALLY good and very moist! I did change the recipe a bit....instead of oregano/rosemary, I just added 4 tsp. italian seasoning and instead of red wine vinegar, I used the juice from two whole lemons, and put the leftover lemon skin inside the cavity of the chicken, along with half an onion and 4 cloves of garlic. I also used 4 tblspoons olive oil and added 2 tsp. garlic powder. It was delicious! Bake it for 450 for the first 10 minutes, then reduce the heat to 350 and cover with foil for last 30 minutes. Delicious and so easy!

Baked Oatmeal II

This was very strange. I followed the recipe exactly, except halved the sugar. It is edible, but no one really liked it. We tried eating it plain, and also with some milk on top, and both ways were not very good. It has an okay flavor, but the texture is very strange. Will not be making this again, that's for sure!!

Very good! I added some dried basil, oregano, and parsley and used potato instead of barley and pasta. I also used mostly fresh veggies. it was delish! this recipe is a keeper!
