Banana Crumb Muffins

mmmm these were sooo good! I used oil 1/3 cup oil instead of butter, increased the cinnamon in the topping and also added cinnamon to the dry batter mix. It was seriously good. I doubled the recipe and made 24 muffins.

Fantastic Black Bean Chili

This is a good, healthy, easy chili recipe. It wasn't the best chili I've ever had, but it was good and comforting. No one complained, but no one raved about it either. I thought it was a little on the dry side, and it would be better with a cup of water added, and some salt. Will make this again when I'm looking for an easy, healthy dish.

Easy Hummus

This was super easy and so delicious! I will NEVER buy store bought again! This is definitely a great base recipe. I added oil and the entire bean liquid because I like my hummus not so thick. I also added paprika. Yum! This is definitely a keeper!

Japanese Zucchini and Onions

This recipe was soooo good! I made this for myself and 2 other people and every bite was gone. I will double it next time. I served this rice, and salted pepper pork chop and it was sooo delicious! I left out the teriyaki sauce and used sesame oil instead of vegetable oil. This is going to become a staple side dish!

Seasoned Turkey Burgers

This was a decent burger. A little too salty/oniony for my liking, but good nonetheless. Also, I don't like it because all the onion soup mixes had MSG in it, and I don't like to eat MSG.

Easy Morning Glory Muffins

These were really good. I used 3/4 cup applesauce and 1/4 cup oil to make it healthier. I also omitted the coconut and raisins, as I dont really care for them in muffins, but I might try them next time to see if they add anything extra. Very moist and delicious! I will be making these again! I love how there are carrots and apple in them, to make it healthier. The recipe made 15 muffins for me.

Ham and Bean Soup

This was a good ham and bean soup but I don't think I will be making it again. I followed the recipe to a T, but just didn't love it. It's missing the smoky flavor of a traditional ham/bean soup. I also thought it was *really* spicy and I didn't even add the hot sauce,just the can of jalapenos.

Chicken a la King I

This was good, but SALTY! I had to add more milk/water to make it less salty. Otherwise, it was good. I used peas instead of the green bell pepper and canned chicken. Good, but will omit all the salt next time.

Cinnamon Roasted Sweet Potatoes

No one in my family really liked this. It tasted like roasted carrots almost, not like sweet potatoes. Also, I cooked mine for close to an hour and they were still not quite soft enough. There were all eaten, but will pass next time on making these;.

House Fried Rice

This was really good and a good base recipe for fried rice. It made A LOT! I cut out the shrimp and chicken and doubled the ham, cut out the bell pepper and instead added cabbage and green onion. I also added an extra egg. Really yummy, everyone loved it!

Delicious Ham and Potato Soup

This was really yummy! I added a can of corn,but kept everything else the same. Next time I would add more liquid,as it was wayyyy too thick (my BF said it was like eating mashed potato soup!) but I watered it down w/ milk and it was fine. I would also add maybe carrots and some more celery. Overall a good comfort soup that was really good and a good way for me to use up items I always have on hand.

Kung Pao Chicken

I would give this a 3.5/5. It was good, but didnt taste much like kungpao chicken, more like salty stir fry. I followed the recipe exactly except left out the chili paste since my dad is recovering from a bleeding ulcer. I also doubled the recipe, tripled the sauce, and added one onion, 1 yellow bell pepper, and 2 red bell peppers. Served over rice with a side of stir fried garlic green beans. Was good, but was a lot of prep work and not really worth it. I don't think I will make again.

Blueberry Flax Pancakes

These were really good! I was a little worried, as they looked rather dense and not so good, but YUMMY!!! mmm, VERY fluffy and even better than traditional pancakes. I topped w/ sliced strawberries and syrup. I followed the recipe exactly, but next time I will double the blueberries, as there wasn't enough. Mine made 6 pancakes.

Bell Peppers and Pasta

I would give this a 3.5 if I could. It was really easy, relatively healthy, and good, but just a little plain/bland. I'm not complaining, everything got eaten, but it wasn't a wow dish. I added an extra cup of bell peppers doubled the olives, and added dried basil and Italian seasoning in addition to the oregano. I would make this again for a quick weeknight meal since I usually have all the ingredients on hand.

Pasta Primavera with Smoked Gouda

I really didn't like this recipe and neither did my BF. I don't know what it was about it that I didn't like...but it was sort of bland and not really liking the smoked gouda flavor. It made a HUGE pot too and feel bad throwing it away, so will try to give it away to friends or family in hopes of someone liking it.

Homemade Black Bean Veggie Burgers

These were delicious and received rave reviews!! Everyone thought they were delicious! They definitely taste like a veggie burger, but so good. I used 5 cloves of garlic, 1 egg and flaxseed/water in place of another egg, omitted the hot sauce, and used 3/4 cup panko bread crumbs. I threw it on the stove for a few minutes so it got really crispy before serving. This is incredibly healthy, not to mention super cheap!!! Everything cost less than $5 and fed 4 people.

Baked Salmon II

Family loved it. It came out soooo moist and flavorful! I even left the skin on and it did not taste fishy at all. Will be making this again and again! So easy and very little mess! EDIT: I made this again tonight, but didnt marinate the salmon because I didnt have time, just put the salmon in a glass casserole dish and then threw all the ingredients on top and WOW so good and easy! BF said it was better than any salmon at a restaurant!

Easy Tuna Casserole

This was really good! I used a whole package (lb) of whole wheat egg noddles, 2 cans of cream of chicken, 1 can of cream of mushroom, a can of milk, and a can of peas. It was yummy! It fed 5 adults with no leftovers. Everyone loved it. This will be my go-to tuna noodle casserole from here on!
