mmmm sooo yummy and easy! I didn't want to use frozen veggies, so I used whatever I had on hand (I already had 1/2 roasted cauliflower that I threw in), as well as one onion, 2 carrots, and a bell pepper. It was good and would be good with whatever veggies you have on hand. I could see using mushrooms, snow peas, broccoli, or whatever you would like. Cooked the tofu and set aside and then sauteed the veggies w/ the chicken broth and covered, letting them cook, then when they were almost done added the oyster sauce.
