When Is My Eggplant Ready To Pick, Now?

I am thinking when I am off on Thursday to pick my eggplant, and make eggplant parmesan I have one that is ready to pick.

I love eggplant parmesan, even though I can't eat it, but I was told that there is lactose free parmesan cheese, I just have to find it. Your photos are lovely, and I would pick that now. Eggplant and Zucchini 2 of my favs.

i believe you need to pick while it is still shiny..i know, i don't know when that will be either....turns out i have one that is just a bit smaller than yours which i hope will be ready to pick by the weekend..

Looks like enough for eggplant parmesan, stuffed eggplant and enough left for frying a couple slices for breakfast under your eggs.

I cut it up today, and it looked good so I breaded it and fried it up and put together an eggplant parmesan. I made meat sauce this morning using hamburger, hot sausage, and peperoni. in a bit will turn on the oven to finish it off.
