A topic at work was eating beef blood, as a by product of cooking a steak, I have no problem with it, and often use bread to soak up the blood, and melted fats, and "fond" left in the pan. there was a few who seemed to be tuned off and prefer there meats to be completely cooked thru.

as a side note I prefer my meats minimally cooked, like very, very rare. If I grind my own hamburger I will cook my hamburger rare.

I have found that if you make meat well done, you lose a lot of the flavors and the juiciness that is supposed to be there. I remember my first tuna steak sandwich was at a fancy restaurant and the waiter asked me how I would like it cooked. I had no clue there were varying degrees for tuna. So I went with what the chef recommended which was rare or barely cooked. It was delicious! I still think about that sandwich to this day! I was at another burger place here in Atlanta, and it has a tuna tartare sandwich. My mind went to my fond memory of that tuna steak and I was like why not.. may as well try it. OMG! it was sooooo good! i don't think i will ever be able to eat tuna steak medium or well done ever again!!!

Raedwulf has it right! I want my steak or burger "black and blue." DH used to say I ate meat so rare that if I didn't finish it there was a chance it might recover. I don't eat beef to much anymore, but when I do, it is very high quality and I know how it has been handled. I would rather skip it altogether than eat it well done.

BigShotsMom : Michael Symon and Mario Batali stated once with higher quality meats you become satisfied with a smaller portion. I tend to agree with that, because I chew slower and savor the taste than any grub steak I would happen to buy.

A good vet could get my beef off the table in no time! Just char the outer edge and the blood flow1

I used to order my steak "mooing," but I've found that a medium rare steak, with a warm pink center, is more enjoyable than one that is cold and raw inside. Well-done steak, on the other hand, is not worth eating.
