I am thinking about making crackers and found this recipe.

Homemade Cheez-It Crackers<

I have been reading a box of Cheese it's I Have, what is missing is Baking soda.

Anyone make crackers before and have them turn out?

I have made the Honey Graham Crackers from this site. They are very good. I may just make them tomorrow. Let us know how yours turn out.

I make a few different types. ~~ ~~ The hardest part is getting them thin enough. I finally learned to roll them out on the same parchment I am baking them on.

I am wondering if I use my pasta machine if that would work to get them rolled out thin.

You might be able to get them crisp if you used ammonium carbonate/bakers ammonia. I have a local grocery that sells it but that is unusual. King Arthur Flour has it available. It has been years since I last made crackers and I was unfamiliar with ammonia carbonate at the time. My crackers had good flavor but were never crisp like commercial ones.

I've only made crackers once that turned out crisp. I did what BSM did, rolled them and baked them on the same sheet. Do you think the dough would stick on the pasta machine? It would be great if that worked!

I looked at that recipe and it reminds me of the one I've made that Ina Garton does with bleu cheese, they will not be like cheez-its out of the box. Good luck on your cracker quest!

I was going to say Ina Garten makes them (barefoot contessa) you might try to look that up on the food network website.
