Easy and Delicious Slow Cooker Cassoulet

Everyone in my family loved this. I used turkey bacon and kielbasa. The only other ingredient change I made was to add carrots. Using a slow cooker for me is about the ease of preparing the meal, so I didn't pre-cook anything but the bacon. I layered the whole chicken breasts, bacon, sausage and onions in the dish then mixed the remaining ingredients, except the bay leaves, in a bowl before spreading over the top. Placed the bay leaves on top and cooked on low for 7 hours. Towards the end I shredded the chicken and mixed. Delicious!

Fluffy Maple Icing

This is the same recipe that my Great Aunt used. Fancy grade Vermont Maple Syrup has the best outcome. Be patient when boiling down the syrup, it is worth the wait. A couple of changes; we use three egg whites and no salt. The third egg white ensures enough frosting for round cakes.

Spicy Fisherman's Pie

I liked the idea of this recipe, but tailored it to my family's tastes. Added peas to the carrots and onion and used cream of mushroom soup mixed with a little fat free half and half instead of the heavy cream. Added small sized shrimp to the sauce and used paprika instead of chili powder. Poured over fish, topped with brown rice and sprinkled small amount of monterey jack cheese on top. Baked according to the recipe. Very tasty, going into the rotation. Thank you!

Simple Roasted Butternut Squash

This was delicious. It is now our favorite way to prepare butternut squash. Cut in half length wise and sliced along the dimples then used vegetable peeler as others suggested. Never new it could be so easy.

Beth's Spicy Oatmeal Raisin Cookies

Best oatmeal cookies evah! First batch i used sligtly less of the cloves because I wasn't sure how the kids would like the spice, next batch I will use full amount. Kids loved them and asked for more. Follow up: made them with full amount of cloves and the kids (5 and 3) loved them. Getting lots of requests for the recipe too.

Pasta with Peas and Sausage

Very good. Followed others suggestions and made a white sauce with fat free half and half. Added the cheese to the sauce and used chicken sausage. I also added extra garlic and salt and pepper.

World's Best Lasagna

This was great lasagna. Didn't alter the recipe except took others advice and didn't pre cook the noodles. It came out with the perfect texture. Left overs held together well in the freezer. The family liked it so much that I now use this as sauce for pasta dishes. An added benefit is being able to throw everything in the slow cooker. Great recipe.

Chicken Marsala

This was fantastic. Took the suggestions of others and cut back on the butter (2 TBS) and Olive Oil (3 TBS). Also removed the chicken from the pan after cooking and deglazed the pan with liquids to make the sauce. Added lost of extra mushrooms. Needed more sauce so added some chicken stock and garlic and thickened with some of the leftover seasoned flour. At the very end added a small amount of heavy cream. Served over wheat linguine. My soon to be 3 year old kept saying "This is good, this is good!". Very tasty.

Crispy Meatballs

Pretty good. I made a smaller size meatball and baked them at 400 degrees for 12 minutes, they came out perfect. They seem to be moister than when made with bread crumbs.

Tangy Slow Cooker Pork Roast

This was pretty good. Not a real strong flavor, but it was flavorful and the meat was very moist. I did cut back a little on the sugar a little. Everyone liked it.

Turkey Tetrazzini II

This is a keeper. I used penne pasta and added mushrooms and spinach. Even my two year old liked it. Put some up in the freezer for those nights when time is short. Can't wait to have it again.
