Whiskey Chicken

Very good! I took the advice of many of the other reviewers and first sauteed onions and 1 clove of garlic in two tablespoons of olive oil and then during the last few minutes of cooking the chicken in the soy sauce mixture I added broccoli and red bell pepper. Lastly, I made some brown rice and poured it on top. Deliciousness!

Shrimp Lemon Pepper Linguini

I really liked this meal. I made it for my parents and they also really enjoyed it. I had it for lunch the next day cold and it was still good. I look forward to making this again!

Honey Milk Tea - Hong Kong Style

Healthy Garden Salad

This salad is one of my absolute favorites (as well as my boyfriend's favorite and my co-workers). I brought it to a potluck at work and everyone raved. It was definitely the prettiest thing presented and thankfully tasted just as good as it looked! It also worked very well for preparing the night before. I doubled the recipe and didn't have enough black beans so I ended up adding a can of garbanzo beans as well and still excellent. Definitely something I recommend.

Fudge Puddles

I brought these to work and everyone loved them! I didn't have a melon baller so I used the end of a cork stopper for wine and rolled it around to make the "puddle" and it worked great! I I did end up greasing the muffin tin to help the crust come out easier after it cooled.

Make-Ahead Vegetarian Moroccan Stew

Really delicious and easy stew. I substituted zucchini for the regular potato because I have so much of it this time of year and the stew still came out wonderful. I did cut it in half because it was only me and my mother eating and it made much more than three servings! It made about 8 cups of stew. Great to have as leftovers though, so no complaining here! Thanks for the tasty healthy dinner!
