Ground Beef Enchiladas

I thought these were excellent!!!! I substituted the sour cream for the yogurt and used a combination of shredded cheeses I had (mozzarella, monterey and colby), also added garlic, paprika, and chili powder to the meat. The only problem is the corn shells broke easily. Next time I will use an enchilada sauce to soak them in first. Also, would use additional sauce for the top of the dish. Will definetly make again!!!

Tiny Chicken Turnovers

The reason the recipe is only 3 is because I "tweaked" it far too much. First of all, I used premade pie crusts since I figured it would be about the same as a pastry, and it would save me some time. Well the filling was far too dry and didn't have nearly enough flavor. I don't know if I had actually made the dough if it would have turned out much better or not. I may try and do it again and follow the recipe but the inside still needs more seasoning

Cinnamon Snack Mix

Very easy to make! (Especially since my 11 year old daughter did it ALL!) We doubled the recipe, used 5 c. honey grahams cereal and 5 cups Cinnamon graham cereal. Omitted the ramen replaced with cheerios. I cut back on honey like suggested by one user and although good, I would have like more honey taste. Because of the large quantity, had to bake several batches on cookie sheets for appx. 6-7 minutes each. Family loves it and daughters classmates loved it!!!

Leftover Pot Pie

Super easy to make. Next time will cut back on the meat/veggie mixture so there is more gravy for the pie crust when eating since that is what my family likes best. I used a dry turkey gravy packet for my sauce. I used leftover corn from our "March Turkey Day dinner" and threw in frozen peas, and some cubed frozen hasbrowns. My picky 3 year old ate this and she is strictly a mac and cheese gal!!!! Excellent, easy recipe!!!!

Chi Tan T'ang (Egg Drop Soup)

Very easy! Very good! MUCH better the 2nd day. I added some browned, ground pork that I had left over from the egg rolls I made the same day and threw it in while the boullion was cooking. Threw the green onion in as a garnish on individual bowls since some of my guests don't like onion. Will make again, and again!!! (Did cut vinegar in half, but not soy!)

Oven Fried Chicken III

I thought this was very easy and I followed the recipe exactly as posted. I would make a few changes next time though. First of all, I would BARELY use any mayonaise. I mixed the mayo with a little bit of milk so it would spread on to the chicken easier, those pieces were good, the ones that were slathered in mayo before I thinned it had too much mayo and hubby could see it when he was eating. Next time I will bake at 375 for 30 minutes, turn and bake for an additional 30 minutes. The skin didn't crisp like a fried chicken should, but the family was fooled and enjoyed it none the less. Overall, pretty good!!

Cabbage Rolls II

I thought these were very good the only reason I gave it four stars instead of 5 is that the meat mixture was TERRIBLY bland and that was even adding some extra stuff too (garlic, more pepper, onion powder, Alpine Touch seasoning) Maybe I just chose the wrong seasonings but with adding the extra sauce ( I doubled the sauce recipe and then added about 4 small cans of Spicy V-8 juice) it was fine. Very, very good. Baked covered at 350 for about 45 minutes and then uncovered for last 15 minutes. Sauce was a little runny but I'm sure that was because of the V-8. Will make again!

Spicy Seafood Shell Appetizers

I am giving it three stars which in this case was high, but I feel terrible giving it anything lower since I didn't follow the recipe exactly. I was out of phyllo dough when I decided to make for the Super Bowl yesterday so I used ready made pie crusts. Everything else was exact except I did add some garlic powder and used fresh seafood. My husband took one bite and that was enough, I took a bite of the rest and it was enough for me too. Sorry Mary Beth!!!!

Hoagie Dip

I really wanted to try this recipe and should have known better than to take it to a shower without trying it first. It had WAY too much mayonaise. Think it could have been easily cut in half. I think it would have been better if the meat would have been cubed and not sliced thin. Used as a chunky spread on bread maybe. Sorry, I didn't like it and most of the shower guests didn't either. Alot of plates had this left on it when they went into the garbage.

Cinnamon Sugar Crisps

Super easy and very tasty. I ended up using extra sugar after the first batch to give them a sweeter flavor. Had lots of compliments from the shower guests where I served these. Served with Raspberry Jam for dipping. EXCELLENT snack for kids to help with. My 12 year old did the majority of these!

James' Fire Salad

This was not terrible, not great. Decent flavor. I was looking forward to something a little more spicy. Without the seeds, the jalapenos were not hot at all. And since the Anaheim is never hot, it wasn't too spicy. The cilantro gave it the most flavor in my opinion. Served with a Southwestern dressing.

Hawaiian Punch Slush for Adults

Made this for a "Girls Only Weekend" camping trip and it was gone the first night we brought it out. I couldn't find Cream of Coconut so I used Coconut milk (found in Asian food aisle) they could very possibly be the same thing and I just never knew. I doubled juices and milk and used bottle of vodka. Had a problem with freezing but only because I made this and froze it in the camper freezer. I used lemonade and a V-8 Splash "jug" that had Strawberry and Mango flavoring. EXCELLENT DRINK!!!!

Chicken Cordon Bleu II

Huge hit in our household!!! Everyone loved it and no one requested any changes. I used Provolone cheese since I had it on hand. Needed more flour/paprika then recipe called for but other than that, it was delicious!!! Didn't find that it was too time consuming at all!!
