Chickpeas in Tomato Sauce With Feta and Wine

Decided to give this recipe a try as I was looking for something to go with risotto and roasted asparigus for a vegetarian dinner party. As some other reviewers suggested, I used tomato sauce instead of the diced tomatoes; and red wine instead of white and it turned out quite well. Because some reviewers did not care for the feta cheese, I split the finished product into two separate serving dishes - added feta cheese to one and parmesan reggiano to the other. Between the two, the feta version was by far my and my guests preference.

A Great Pepper Salad

As other reviewers suggested, I cut the recipe in half and made several modifications. Since I'm vegetarian, I used tofu pepperoni, left out the mushrooms (personal preference), and added cherry tomatoes, cauliflower and artichoke hearts. Lastly, to try and reduce the fat I only used a couple of tablespoons of olive oil and some light Italian dressing. Served for a large dinner party (15) and the entire thing was almost completely finished. I personally found it "okay". I really liked the addition of the artichokes and cauliflower, but was less keen on the cherry tomatoes. I also found that the cheeses got kind of soft - but, not in a good way. It was as though the marinate melted them a bit even though the dish was left in the fridge to marinate for 3 days. Next time I might try and make a vegan version and leave out all the cheese.

Healthier Banana Banana Bread

As other reviewers suggested, I altered the recipe a bit. Used 1/2 all purpose and 1/2 whole wheat flour, splenda brown sugar (quantity cut in half as per the slenda directions) istead of regular brown sugar, 1 tsp of vanilla and 1tsp of cinnamon. Also added 1/4 cup of raisins and 1/4 cup of semi-sweet chocolate chips. I baked it as one large loaf so it ended up taking about 80 minutes in the end. The end prodect was absolutely delicious!

Truly Delicious Brussels Sprouts

Yummy brussel sprout recipe! I used just a little oil, no butter, and added a tsp of ground mustard seed. I too sauteed longer than suggested, until the spouts turned a nice bright green.

African Peanut Soup

OMG! This soup was delicious. Who knew that tomato, red pepper, and peanut butter was such a wonderful combination?! I made it almost exactly as indicated except I made only half a recipe as I only had one red pepper on hand, I doubled the chilli powder as other reviewers had suggested, and I put the rice in with the crushed tomatoes and broth as it takes 30-40 minutes to cook brown rice.
