Sugar Cookie Icing

This is the icing I'll be using with my sugar cookies from now on! It was super easy to make and dried shiny and smooth. I was able to stack the cookies and the icing stayed nice. I did add about 1/2 tsp more milk than it called for and substituded vanilla for the almond extract. It is quite sweet but you don't need to put a whole lot on each cookie. The recipe said it would ice 12 cookies but I did double that. Everyone loved my cookies and they really looked great. My 3 year old helped put the icing on and even though hers looked pretty messy, they still tasted good :)

Meringue Mushrooms

I had a bunch of leftover egg whites from making eggnog and decided to try these meringues. I used a ziplock back and cut the corner off to pipe out the stems and caps. This worked quite well but some of my stems ended up being too short and fat. I found that the mushrooms looked more realistic when I dipped my finger in cocoa and smudged it on after baking the mushrooms rather than sprinkling it on beforehand. Overall, these were pretty easy to make but quite time consuming. I live in Florida so we really don't have any non-humid days even in December. These set up pretty well considering. A few were still kind of chewy in the center but they were crispy on the outside. A tasty sugary treat that looks really impressive! Edited: I am changing my 4 star rating to a 5 because of how much every liked these at our party tonight. Every mushroom got eaten and no one could believe I made them.

Amazingly Good Eggnog

I just wanted to add a few comments since some of you have had trouble with the egg yolks cooking. The milk should just barely come to a boil, not a full rolling boil. Make sure you pour the milk into the yolk/sugar mixture and not vice versa. Also, it has to be done very slowly. Start off pouring in about half a cup and whisking as you do it. Then add a little more milk, increasing the amount each time until about half the milk is mixed in. By that point, you can pretty much just pour the rest in and whisk. I've never had my eggs get cooked by the milk and this is always how I do it. Hope that helps! And remember to add rum TO TASTE. My family are drinkers so the amount called for in the recipe is the amount we like. You might want to start off with less and add more later after the flavors have time to blend.

Slow Cooker Mashed Potatoes

I made these for Thanksgiving dinner and everyone loved them. My father-in-law even said they were "every bit as good as something you'd get in a restaurant." I loved that I could make them ahead of time and keep them warm in the crock while I cooked everything else. I didn't have quite as much cream cheese or sour cream called for but they were still super rich and yummy. One extra thing I did was save the broth I cooked the potatoes in and used it to cook my green beans in. It gave them really good flavor!

Instant Pistachio Salad

This is a super easy salad to make. I've made it for several family functions and most everyone loves it, especially the kids. My daughter hates pineapple but eats this stuff right up and always asks for more.

Caramel Filled Chocolate Cookies

These were excellent cookies! They turned out perfectly using parchment paper. They were a bit more work since you have to unwrap all the candies and roll each cookie but well worth it!

Yummy Quiche

This was very good and very easy to make. As suggested by others, I cut the recipe down to 5 servings which was just enough to fill a pie shell. I used refrigerated crescent roll dough for the crust which added to the good taste, although the long cooking time made the crust very dark. I also substituted chives for the onions. The quiche set up nice and firm the way I like it and the overall flavor was excellent. Even my picky husband went back for seconds. I'll keep this recipe to use again!

Venison Stew I

This was excellent! I was out of potatoes so I cooked it without and served the stew over egg noodles. Very flavorful and tender! I will definitely save this recipe for the next time we get some venison.

Chocolate Pecan Pie III

This was very good. Quiet dense and the pecan flavor was still predominate. It had a fudgy texture which was different than I expected but good. It kind of like a rich brownie with loads of pecans in a crust. I initially gave this 4 stars but am changing it to 5 because the pie seems to get better after a day or two!

Mrs. Sigg's Snickerdoodles

These cookies have a very good flavor and texture. The kids really liked them. I used butter flavor shortening instead of plain. The only problem I had with this recipe is that the dough was way too wet to shape into balls. I had to add an extra 1/2 cup of flour to cut down the stickiness and put it in the refrigerator for an hour. Even then, it wasn't as firm as it should be for shaping. I used a scoop and spoon and just kind of rolled the lumps around in the sugar/cinn. mixture that way. Overall these are tasty cookies!

Bacon and Cheddar Stuffed Mushrooms

These mushrooms were quite good. I couldn't find crimini mushrooms so I substituted baby portabellas. I made them for a Christmas eve buffet and everyone liked them. The only problem I had with this recipe was that the mushrooms got somewhat dried and shriveled looking in the over. Next time I think I'll drizzle a little olive oil over them first.

Seasoned Crackers

These were super easy to make and had good flavor. The kids liked them a lot but the adults didn't seem too interested in even trying them. Maybe because they still look like oyster crackers and everyone knows how oyster crackers taste. I don't know. I liked them though!
