Spent the first half of my adult life cooking very basic meals for very picky eaters; my oldest child is autistic and would only eat certain foods. I'm a mother, wife, and Registered Nurse who works 36 plus hours per week.
My favorite things to cook
I'm always looking for new recipes to try. My husband will "try anything once" and my child who still lives at home will eat just about anything (except seafood). I love cooking the "staples"; chicken, beef, pasta, and slow cooker meals. I'm no gourmet chef but I've been cooking for a long time. I also love to bake when I have the time to do it.
My favorite family cooking traditions
I can pull off cooking a full Thanksgiving or Christmas dinner single-handedly for a family of 5-6 people. Exhausted afterwards and someone else has to clean up the mess!
My cooking triumphs
2 published recipes on this site- recreated my Mom's macaroni salad and my Dad's Cucumber salad by trial and error until I got it right. They never wrote anything down but I think they were whispering in my ear when I did it. :)

Easy Meatloaf
Took other reviewers recommendations and sauteed the onion with a couple cloves of minced garlic; used seasoned bread crumbs and added the Worcestershire sauce. I used the 5x9 loaf pan as indicated in the recipe and after 1 hour at 350 degrees it was still red inside. I ended up adding an additional 30 minutes to the posted cooking time. Tasted OK... hoping it firms up in the fridge overnight so I can get a decent sandwich out of it tomorrow.

Chef John's Lasagna
OK, I haven't made lasagna in years. The stuff I used to make was icky and the noodles were uncooked. Made this recipe last night and the family raved over it. My only question: where is the garlic??? Yes, I cheated and tossed in a couple cloves of minced garlic... anyhow, my aching hands from grating cheese were totally worth it and this will be my go to recipe! As always John, your recipe was phenomenal. I'm trying the maple-brined pork loin next! :)

Super Duper Slow Cooker Beef Stroganoff
This recipe, as written, is delicious! Dummy here forgot to add the parsley at the end but it didn't detract any from the flavor. So I have a nice bunch of fresh parsley hanging out in the fridge... maybe I'll dress up the oven roasted potatoes I'm making tonight with them. Great job cwmom98! :)
