Addictive Sweet Potato Burritos

Yes, this is "weird" in that it is different from your typical bean burrito-- but I thought it was very good for an easy meal for 2 non-vegetarians trying to eat more vegetarian meals. I thought, "Really, 3 TBSP chile powder" (not a typo) & "TWO cups of water"?? Well, to solve the "bean soup" problem, and the "bland" sweet potato concerns, I cut the microwave-cooked sweet potatoes into cubes, & mixed it with the bean mix, creating the perfect blend of texture, taste, & water absorption for the burrito filling. I put the filling directly into the flour tortillas with the cheddar cheese, because I was on a hot houseboat, & did not want to turn on the oven. Because I had no potato masher or food processor to mash the kidney beans, it took a while longer to mash with a fork, but not impossible(think camping). I would gladly make this again, especially if the filling I froze, tastes as good as other reviewers proclaimed.

Sweet 'n' Hot Glazed Salmon

Somehow I missed the part about boiling all the ingredients! I just threw all the ingredients into a zip lock & marinated the salmon in it for a couple hours & grilled it. It has received rave reviews both times I have made it. Until this recipe, I always cooked salmon with only lemon pepper because I always thougt the lovely taste of salmon should not be covered up. I, too saved some marinade & used it the next night on lamb. I think it is good on any meat. All the different flavors are detectable on the finished product. I am making it again this weekend!

Grilled Peppers

This recipe couldn't be any easier! I used the smaller multi-color sweet peppers for a bite-size hors d'oeuvre. I was afraid fresh, un-grilled jalapeno would be too hot but 2 slivers the length of the pepper were perfect. They disappeared from the grill in seconds & I am making them again this weekend. You could vary this recipe in infinite ways.

Ultimate Shrimp Scampi

I made this exactly like the recipe but cut the butter by 1/4 and halved the amount of cheese an it was just fine! I added a half pound of mushrooms because I had them. I think you could throw in whatever veggies you like. Added it to my recipe box.

GG's Bulgur Salad

This hearty salad delights the taste buds with its' satisfying array of textures & flavors! Crunchy, chewy, savory, sweet; fresh & dried; raw and cooked; robust yet light... This salad literally has it all! I made this three times in ten days for gatherings of 20+ people, easily adjusting the ingredient amounts with the servings calculator. Everyone commented on how good it was and sought me out for the recipe, intrigued by the ingredients. I added an ear of fresh, raw corn cut off the cob, and used Greek yoghurt in the dressing. Even two days after adding the dressing, the salad still tasted fabulous and fresh! I don't think you could hurt this recipe by utilizing any number of ingredients you may have on hand. I put in only half the amount of almonds because it seemed like too much. I rarely use muenster cheese and was impressed by its mild and creamy contribution to the medley. Can't wait to bring it to another function!

Pizza On The Grill I

I make this all the time for large groups because it is easy to customize the individual pizzas for the vegetarians and all food preferences. I have made it over a wood fire with a grate (boat camping). I made it for my adult daughter's birthday party on our housebooat. We put all the "kids" to work chopping, grating, rolling. They loved it! Grill all the vegetables and anything that needs t be cooked, and all the pizzas on one side first. It doesn't matter if it all gets cold because it will all get hot again when you cook the other side. Have each person place all their desired ingredients on the cooked side. Sauce first (we have choice of pesto sauce & red sauce) then ingredients and your favorite cheese over all. Return to the grill to cook the bottom side. P.S. This is a very tasty dough recipe so make your own! (bread machine on dough cycle works great.)

Tofu Lasagna

My carnivorous husband who won't touch tofu said it was delicious! good sauce is the key to all pasta so use your favorite. I used whole wheat lasagna noodles. I never pre-cook the noodles. I just rinse them in water and layer them on. Just make sure they are totally covered with sauce and will cook perfectly. I added 1 pkg of frozen spinach & 2 C of ricotta to make filling. Be sure to squeeze all the water out of the spinach and the tofu as was suggested above. These measures prevent runniness!
