Chicken Avocado Casserole

Delicious! Took more than 30 min of prep but I chopped and sautéed an onion too ( and used a tsp canned chopped garlic).used gluten free flour and my gravy wasn't very soupy but yummy all the same. Used pine nuts instead of almonds. The avocados really added the best finishing touch, I would have never done that on my own! Even though this was more work than I like, I'm adding it to my recipe box. Will make again.

5 Quick Low-Cal Weeknight Dinners

This menu was perfect for a week of dinners, when we don't get home from work til 6pm. My favorite was the shrimp dish and my least favorite was the veggie stir fry. It would've been easier to buy pre-packaged veggies and a bottle of stir fry sauce. All dinners were filling, satisfying , low cal and tasty. They were quick too - very important! I prepped for the meals the night before so that whoever came home frist would start cooking. I hope Allrecipes collects more 5-day dinner menues like this.

Szechwan Shrimp

Wow! EASY and delicious. I used angel hair pasta, fresh ginger, and added snow peas because I had them on hand. I'm an average cook and am always looking for quick fool proof recipes. After reading reviews, I doubled the sauce, I used flour instead of corn starch because I didn't have any - it turned out great. Made the sauce the night before, so it only took a few minutes to whip this up. A perfect recipe when you don't get home til 6pm.

Chicken with Asparagus and Roasted Red Peppers

This was very easy and very tasty! I cooked up all the broth and had to add a little extra. Forgot to but roasted peppers so broiled afresh pepper in a pinch and added it in. My husband and I ate everything. The balsamic and cheese really did the trick! Adding to my recipe book.

Patti's Mussels a la Mariniere

Very good recipe, but the cook time was misleading. The actual cook time is 25 min, prep time 10-15, and you have to give yourself time for the mussels to rinse in the water. Like other reviewers, I doubled the sauce, which was excellent. The mussels themselves didn't absorb any of the sauce, so unless you get a good scoop of sauce they were bland. I'm not a great cook, so it could've been my techique. We served the dish over polenta and would definately do that again. We had leftover sauce and will use that with chicken tonight.

Potato and Cheese Frittata

Finally, what I've been looking for. I added more eggs and mixed the cheese up in the egg before I poured it over the potatoes. Also added leftover broccoli & cauliflower - yum. Sprinkled garlic powder and Everglades seasoning in addition to salt and pepper. Deeeee LISH!

Caramelized Baked Chicken

I'm a beginner cook, and this recipe was perfect. There were a lot of complaints on the home recipe that the sauce wouldn't caramelize. Not so with this - cooking on the stove first did the trick. I cut up the chicken into large nuggets so that the sauce would touch more of the chicken. I also sprinkled some sesame seeds on top during the last 15 minutes. Excellent!

Baked Zucchini

Delicious! Very easy, and it outshined our entree. I used olive oil instead of butter and mixed the cheese when I tossed the zucchini's - it made the bottoms a litte crusty which was good. Cruncy outside, yummy and juicy in the middle.

Corn Pudding II

Not recommended at all. This took over an hour and 1/2 to cook, and even then it was soupy. Sugar collected at the bottom, even though I blended it all together. Not only was I late to Easter dinner, I brought an embarassing dish with me! I recommend using one of the other many corn pudding recipes out there.

Colleen's Slow Cooker Jambalaya

This recipe was fantastic. We used a whole rotisserie chicken and used Rotel rather than regular diced tomatoes, which kicked up the spice a bit. Added mushrooms because we had them in the house. The only recommendation I have is to put the shrimp in an hour before completion, as they didn't quite abosorb the flavors. The leftovers did the trick though- YUM!
