Flax and Sunflower Seed Bread
This bread recipe is forgiving. I messed it up in a few different ways. Went to add the sunflower seeds that I had set aside in a mug, and instead dumped a mug of water in. I ended up tossing in more bread flour and a smidge of yeast and sugar to compensate. I also changed the serving size to 21 servings. From there the I substituted 2 tablespoons ground flax seed for some of the whole wheat flour. Used the same amount of flax seeds. The bread was wonderful except that I used salted sunflower seeds. It was like have little chunks of wood in the bread. Without the sunflower seeds it would have been a perfect loaf!

Easy Pumpkin Muffins
This recipe is insanely wonderful. True to other reviews the muffins are ridiculously simple to make. I now have made it with a white cake mix and added pumpkin pie spice, and the spice cake version mix (no added spice) and both were terrific. I made it once with 1 egg and 6 ounces of evaporated milk and it turned out cake like, but yummy. A different time I also once added in a cup of soy milk, and still fantastic. Usually I use my mixer to blend with great results. Without liquid add-ins the batter is very thick, but excellent. Once I hand-blended and had annoying cake mix clumps to contend with, so I will always use my kitchenaid mixer- just be careful to not over mix. Others reviewed that these stay moist for days, and I completely agree. I have not tried freezing/thawing but I expect that this would also be just fine as well. This recipe was so good I just picked up a case of pumpkin to make sure I have it on hand for this recipe. If you are a pumpkin fan also try the pumpkin soup recipe on this site as well.

Cream of Pumpkin Soup
Overall this is a nice recipe, however, I ended up adding some brown sugar to help round out the flavor. It was ok before the brown sugar, and significantly better with it. This was simple to make and I am looking forward to taking the leftovers as a lunch tomorrow.
