Green Tomato Cake

Reviewed: Sep. 5, 2011
I bought a bunch of green tomatoes at our local produce stand and couldn't wait to try something new with them (I'd only ever had them fried before). Tried this green tomato cake and oh my WOW was it good!!! The only changes I made- added a bit of vanilla, omitted the raisins and subbed pecans for the walnuts. I also baked it in a tube pan and didn't even frost it as I had planned to because it was so perfectly moist and delicious as is! My 5 year old twin daughters aren't green tomato fans, so I told them it was green apple cake and they happily gobbled it up! My husband and I couldn't believe how much it tasted like apples either. We have found a new transition-into-fall recipe that's sure to be a staple around here- thanks so much!!

Butterscotch Oatmeal

Reviewed: Dec. 7, 2010
I followed the recipe to a T, and was very disappointed in the outcome. To me it tasted more like pure sugar than butterscotch. I'd have been better off stirring in butterscotch chips to achieve that flavor, which I'll try next time I have a hankering.

I loved these! I didn't change a thing and the whole family found them to be completely delicious. Had fun making them, too. Great recipe!

Angela's Awesome Enchiladas

Reviewed: Apr. 6, 2010
This is absolutely the most amazing dish I have ever cooked from scratch. Angela, I am nearly speechless...5 stars isn't nearly enough for a recipe this delectable. I didn't change and thing and won't the next time I make this, either- and there will be plenty of next times. Thanks SO much for sharing!

Chicken Crunch

Reviewed: Feb. 18, 2010
I was a bit skeptical that this would taste as good as it did, being so simple with minimal ingredients, bot WOW! What a great surprise and as a busy mom, the simplicity can't be beat. The only thing I did differently was how I prepared the crumb topping (which I do for all of my casseroles)- melted a stick of butter in a small pan over low heat, removed from heat and added the sleeve of crushed crackers, mixing to combine completely. This ensures a perfectly even coating. My husband begged me to add this to the meal rotation and 2 out of 3 of our kids gobbled it up, which makes it a sure winner! Thanks for sharing.
