Baked Salmon Fillets Dijon

This looked great when I pulled it from the oven. But, Dijon mustard and salmon are simply a no-go. Maybe this recipe would've worked with a milder fish like Tilapia...or maybe just omit the dijon and bake with fresh herbs.

Thai Red Chicken Curry

Awesome recipe. So rich and satisfying! I used sesame oil instead of olive oil and I added a little fish sauce for umami. I also put my cilantro and onions through the food processor. Some of the other photos looked too chunky and, for lack of a better word, "gross." I thought the consistency of my sauce was perfect.

Chipotle Chicken

Nice recipe! I used corn, as another reviewer suggested. The corn definitely added some sweetness and gave the dish a Mexican feel. I can't even imagine having used spinach. Coincidentally, I ran out of sour cream and had to add some mascarpone. What a great addition! In addition to the corn, the mascarpone really helped counter-balance the chipotle's heat. As other reviewers suggested, the chicken needed another 20-25 minutes in the oven at 375. Also, I had a tough time plating this dish. By itself, the broiled chicken looked dry and when I added the cream sauce, the plate got messy.

Easy Indian-Style Chicken

I love this recipe. Like one of the other reviewers, I used double the cumin and brown sugar and used hot chili oil. I also added cornstarch to thicken it up. Someone made the comment that this recipe was too bland. I can't imagine it. Mine came out rich and savory.

Cashew Chicken I

Thank you for this recipe! I added the egg to the melted butter, as another reviewer recommended, and the coating stuck nicely. The beauty of this recipe is in it's simplicity and flexibility. It is delicious "as is" but I intend on playing around with it, possibly adding some Allspice or honey or cocoa. I haven't given the highest rankings to many of dishes on Allrecipes.com but this is a clear exception.

Chicken and Red Wine Sauce

I thought this recipe was just "okay." I used a cabernet which was definitely too fruity. Next time, I'll go with something drier, more spicy. I should have known better than to leave the garlic in from the get-go as the recipe indicates. By the time the chicken was cooked, the garlic was completely fried. Lastly, the paprika wasn't a good "fit." In fact, I just Goggled Paprika and many chefs recommend only using it a garnish (like on deviled eggs). Apparently, it has high sugar content and breaks down easily and becomes bitter when cooked. Perhaps chili powder would've been better. Not bad, all said and done.

Citrus Glazed Chicken

I followed this recipe to the letter. Not bad. Nice hints of citrus but a little monotone. I think a little brown sugar or maple syrup would make this near-perfect.
