Easy French Toast

Definatley way too soggy, perhaps only use half a cup of milk, and another egg, other than that it was tasty and easy..

Baked Snapper with Mandarin Oranges, Cashews and Ginger

Nice and easy dish, the fish turned out great. I fried the cashews with some chili's before adding at the end, for an extra little zip. Served with some rice, and a salad with a few mandarin's in it. Nice easy dinner. Too bad there were no leftovers, so can't try it cold..

Salmon with Fruit Salsa

Jalapeno's are expensive and hard to find here in Singapore, so I used Green Chiles, and added Cilantro, nice taste, will try with fresh mango next time.

Asian Tuna Patties

Was quite surprised how this turned out. Followed the recipe exactly, except I added 1 tablespoon of orange juice, as I was worried it was going to be too dry, I didn't add any cornmeal on the outside either, as didn't have any handy. They weren't dry, very tasty, I served it with some fresh thinly sliced ginger on top, which was a nice combination. Certainly will make again, as it's quick and easy, and tasty! Thanks!

Mexican Chicken I

Loved this one! I made fresh salsa (Tomatos, Red Onion, Cilantro, Chiles, Lime Juice, and Salt) and then mixed in the cumin, black beans and red pepper. Poured on top of chicken, baked at 350 for 30minutes covered, and then 20 minutes uncovered, and then put some cheese on top for another 5 minutes or so. Served with rice, sour cream and fresh guacamole! Will make it again for sure!

Red Snapper in Parchment Paper
