Chicken Marsala

Really good. I thought I had Marsala wine, but it was Sherry....so I just added some white wine instead. It didn't have that Marsala flavor, but it was still really good...going to make again with Marsala.

Banana Banana Bread

This is a great banana bread, moist and delicious. The only thing I added, after reading some reviews, was a little cinnamon, nutmeg and vanilla. I forgot to add the nuts. I used a longer pan 4 1/2 x 12 and it baked a little quicker in just 45 minutes. Also, I my bananas were a little on the wet side (they had been in the freezer) so I added another 1/4 cup flour because the batter looked a little soupy.

Spicy Chipotle Turkey Burgers

This was so easy and good. Most turkey burgers are bland, these had plenty of flavor! I read some of the other reviews and some people suggested using two of the adobo chilies. I just used one because some in my house like it hot and some like it mild. With one, you could taste the flavor, but it wasn't too hot. I would say if you are a medium to hot salsa person....use two. I did find one teaspoon of season salt a little much, I think I would use 3/4 teaspoon next time. However, I was at the very bottom of my season salt and it may have had more 'salt' than 'season' in the very end. I didn't have mozzarella cheese in slices so i just used a couple pieces of string cheese torn into strips. Yum. We also added saute' mushrooms, avocado and bacon to ours.

Baked Pork Chops I

Followed the directions, but added fresh sauteed mushrooms to the sauce. I baked 30/30 as the pork was done when I added the gravy. YUM! Maybe people who say the recipe was bland didn't season the pork chops first.

To Die For Blueberry Muffins

Very good....I doubled the recipe and even had enough left over for a dozen mini muffins too. I only had enough of the streusel for the 12 muffins. I may have overdone the topping as some of it melted off the sides....but it was still good!

Creamy Cheese Pie

Our family makes this same pie and it's delicious. The other reviewer said it didn't set up....I think this is because the cooking time is off. Our recipe calls for 25 mins baking time, take the pie out, turn the oven off, apply sour cream topping and then put back in the turned off oven for an additional 10 mins. Let cool and chill.

Irish Chicken and Dumplings

Perfect dinner for a cold rainy day. I read the reviews and tweaked it a bit; chopping my potatoes into smaller, bite sized cubes , using a combination of herbs for the poultry seasoning as I didn't have any on hand. (I used a sprinkle each of paprika, rosemary, thyme, parsley and basil.) Oh, and I used boneless, skinless chicken thighs instead of breast meat...again....what I had on hand. I followed the dumpling recipe on the Bisquick box (2 cups mix and 2/3 cup milk) It made 10 dumplings and they came out perfect....light and fluffy. Not sure where others have had problems. My dough was a bit on the stiff side and I used a dinner tablespoon to portion it out into the pot. I did add an extra cup of water because I used more potatoes as I needed to use them up. I had plenty of liquid left. I saved this one to my recipe box. Yummy!

Caramelized Turnips

Pumpkin Zucchini Bread

Very good! I was cleaning out the freezer and found a cup of frozen zuchinni and a cup of frozen pumpkin...so I looked for a recipe to use it up. I changed it a bit to make it more healthy, (boyfriend has high cholesterol) egg beaters for the eggs, 1/2 C applesauce and 1/2 C Earth Balance for the oil, and I replaced the nuts with dried cranberries. I also doubled the spices. I did forget to add the vanilla and but was still very flavorful. I will definitely be making this again. I also didn't have a 2nd loaf pan so I used a Angelfood tube pan. It took about 65 minutes in the oven.

Zucchini Coleslaw

I didn't have cabbage or radishes, so I substituted more zucchini and some yellow squash, along with celery and chopped onion. I also had some leftover Lebne (Armenian Kefir Cheese), so I mixed that with the mayo, picante and cumin. Came out great...and a good way to use up ALL that zucchini that is growing in my garden! Oh, I also added salt and pepper to taste.

Thai Chicken with Basil Stir Fry

We loved this recipe. I didn't want to have a half open can of coconut milk in the fridge, so I used the whole can and made it more of a 'soup'. Also, I didn't have any fish sauce, so I added some Hoisin sauce and used a Fresno chili and some Thai basil from my yard. It tasted just like the Thai curry coconut soup at our local Thai restaurant. Yum. Will definitely be making this one again.

Yellow Squash Patties

I was looking for a recipe to use up a lot of squash and this one had 'most' of the ingredients I had on hand. I used about 8 squash and it made 12 patties. Following a previous example, I used Lawry's season salt, a 1/4 of freeze dried onions (I was out of fresh), one clove garlic, a teaspoon each of cumin, dried parsley, and dried chives. I added 1 cup shredded mozzarella, 1/4 C feta, and 1/4 parmesan. I also added 2 finely diced jalapenos. They came out surprisingly well! 7/10/11 Adding an update....you HAVE to drain the squash or these will not come out right. Made them again tonight just as the recipe calls for and they were really good. I also made a coleslaw out of zuchinni and that was good too.

Tina's Shortbread Chocolate Chip Cookies

I discovered this recipe out of necessity...I was going to make chocolate chip cookies and I was out of eggs. I plugged in what I had into the recipe settings and this one came up. I didn't have any of the problems of previous posters. Next time I'll be more careful in smoothing out the tops of the cookies for a better appearance. I'd also like to make them with brown sugar, instead of white and see if it changes the flavor.

Cioppino

I used the basic broth of this recipe to make my own version of 'poorman's cioppino' and it came out great! I used a one pound bag of frozen seafood mix with octopus, cuttlefish, squid, shrimp, mussles and clams,(about $4.00 at the pac-n-save type grocery store.) some leftover mahi-mahi and rice pilaf, and added some new red potatoes. All the taste, but a fraction of the cost. I would make it with the expensive ingredients if I was having a dinner party. But this was a great, inexpensive version.

Little Meat Loaves

This was a really good recipe. I used 7% ground beef and didn't have any problems. I doubled the recipe and baked it in a Bundt pan. Next time I'll invert it onto a cookie sheet and put the sauce on for the last 10 mins. I didn't think about the sauce being on the bottom of the meat loaf when I flipped it on to the serving platter.
