Grandma's Lemon Meringue Pie
This turned out wonderfully, especially for my first try at a meringue pie. I did use the juice from 3 large lemons and no zest at all. I also added 1/4 tsp cream of tartar to the meringue as well as a splash of vanilla. It looked like way too much meringue but turned out perfect and everyone at our Memorial day barbeque loved it. Thanks for the recipe!

Spinach Brownies
I halved this recipe and used one box of frozen spinach. To save on calories I used a skim milk and a tbs less butter. I did add a slice of bacon (so much for saving on calories), but it turned out fantastic, and I highly recommend it to anyone who likes spinach. My boyfriend loved it as well and he is hard to please.

Open Face Mozzarella Sandwich
I made this two ways. Half as the recipe is written, and half with a piece of prosciutto tucked in there. My boyfriend couldn't have loved the prosciutto version more, and he is NEVER excited about food. I did end up baking everything about 11 minutes and then broiling for about 3 minutes. I have to say it was fantastic.
