Zucchini Bread III

Tasty & healthy, my kids love it, what more could you want? To make it even tastier & healthier, I substitute unsweetened applesauce for half of the oil, and when I make muffins out of the batter I substitute fresh blueberries for the raisins & walnuts. Delish!

Red, White & Blueberry Cream Pie

Great when fresh, but it didn't keep well--the flavor changed and the filling started to separate (yellowish oil seeped out and sogged up the pan & crust). I did use an "extra servings" size pie crust and added an extra layer of berries in the middle to fill out the pie.

Oatmeal Blueberry Muffins

They did fall apart fresh out of the oven but firmed up overnight. However, the flavor is better when warm, kinda dry and "healthy" tasting when cold. Best served with butter/margarine because they aren't very sweet on their own.

Basic Fondue

It's easy enough, and I really liked the flavor, but not quite as smooth as a fondue should be. I suggest substituting Swiss for a cup or two of the cheddar to gove it a better texture.

Chicken Enchiladas V

Not really exciting. We did leave out the chiles, but I don't think they would have helped the overall bland feeling the soup imparted to the flavor.
