The Best Ever Chicken Nuggets

Yum!! Made this gluten free as half of those eating were gluten intolerant. After reading other reviews, I took the advice gleaned and dipped the chicken pieces first in potato starch, then into the well beaten eggs (to which I had added a Tb. of water - makes the eggs beat up more thoroughly), then into a combination of potato starch, non GMO corn starch and sea salt and onion powder. I cooked them in a mix of extra virgin coconut oil and ghee. These turned out the best of any nuggets I have tried to make. I'll be making them again tomorrow night when our daughter and kids come for dinner. Oh, and I used chicken thighs, too, as we all like dark meat better. I used the honey mustard sauce on this site by Chef John (?) and the two together were better than any nuggets and dipping sauce I have ever eaten!

Crunchy Almond Biscotti

Just finished baking these and they are yummy. I substituted 1 cup of the flour with almond flour which I make from the almond pulp when I make almond milk. I was out of almond extract so used a little rum extract. Can't really tell in the flavor though. I also used brown sugar instead of white and added in some chocolate chips along with the almonds. The house smelled so good it was hard to wait through the second baking. This recipe was really easy. I put it together in between doing other stuff. In my oven it took 50 minutes the first baking. I'll be making this again and use it as a base to try other flavors as well.

Broccoli-Cauliflower Salad

Tasty and quick. I chopped up the veggies and did not layer them. Having used up all my mayonnaise on a chicken salad, I used a bottle of Caesar dressing. It was wonderful! Hubby doesn't like to taste any kind of tartness, so I just put a healthy sprinkle of red wine vinegar and a little tiny bit more sugar so he wouldn't be unhappy. He wasn't. This is one of those recipes I will be using again at family get togethers. I had tripled it except for the vinegar.

Easy Meatloaf

Great basic recipe which I gussied up some by using 1/2 ground chicken and 1/2 ground sausage. I didn't have any bread crumbs, so I substituted rolled oats. Didn't miss the bread crumbs, plus I need lower gluten recipes anyway. I left out the sugar and mustard also. I layered half of the meat in the pan, then sprinkled a generous portion of grated sharp cheddar, then the remainder of the meat mix. Oh, and I left out the milk, too, but this recipe turned out very moist. I didn't grease the pan as I figured there would be extra fat from using the sausage. Everyone of the eight people at the table pronounced it to be a 'keeper' for sure. It was absolutely delicious and I definitely will make it again. It proved to be a quick, easy recipe for short notice company coming. Great basic recipe you can switch up different ways for different dinners. Thanks, Janet!

Loved this simple recipe for such an elegant dish. In my usual fashion of not being able to leave a good thing alone (and because I love mushrooms) I added sauteed button mushrooms to the sauce. Served it up with homegrown asparagus, and there was none left even though I had fixed extra servings.

Gluten Free Best Chicken Nuggets Ever

Had the kids and grandkids over when I fixed these and there were no leftovers even though I had fixed a generous amount. They just kept going on about how good they were - even though they have no gluten issues.
