Crunchy Almond Biscotti
Just finished baking these and they are yummy. I substituted 1 cup of the flour with almond flour which I make from the almond pulp when I make almond milk. I was out of almond extract so used a little rum extract. Can't really tell in the flavor though. I also used brown sugar instead of white and added in some chocolate chips along with the almonds. The house smelled so good it was hard to wait through the second baking. This recipe was really easy. I put it together in between doing other stuff. In my oven it took 50 minutes the first baking. I'll be making this again and use it as a base to try other flavors as well.

Chicken Cordon Bleu II
Loved this simple recipe for such an elegant dish. In my usual fashion of not being able to leave a good thing alone (and because I love mushrooms) I added sauteed button mushrooms to the sauce. Served it up with homegrown asparagus, and there was none left even though I had fixed extra servings.

Easy Meatloaf
Great basic recipe which I gussied up some by using 1/2 ground chicken and 1/2 ground sausage. I didn't have any bread crumbs, so I substituted rolled oats. Didn't miss the bread crumbs, plus I need lower gluten recipes anyway. I left out the sugar and mustard also. I layered half of the meat in the pan, then sprinkled a generous portion of grated sharp cheddar, then the remainder of the meat mix. Oh, and I left out the milk, too, but this recipe turned out very moist. I didn't grease the pan as I figured there would be extra fat from using the sausage. Everyone of the eight people at the table pronounced it to be a 'keeper' for sure. It was absolutely delicious and I definitely will make it again. It proved to be a quick, easy recipe for short notice company coming. Great basic recipe you can switch up different ways for different dinners. Thanks, Janet!
