Paleo Pancakes

The last couple of paleo pancake recipes I tried out fell apart and caused much frustration. These did not. i followed the recipe exactly and they turned out pretty good!

Firecracker Fried Chicken Drumsticks

Fantastic. Followed recipe exactly, using Louisiana hot sauce. Make it once a week now. I can put the marinating chicken pieces in the freezer and thaw them whenever I need to in the morning before I leave for work. Best chicken recipe I have ever made.

Great recipe, very quick and easy to remember. I didn't use all the bacon grease in the pan, it would have been too greasy. It tasted even better the next day for lunch!

Strawberry Pie II

I made this for a friend's birthday, and it was eaten up quick! I read reviews on either painting on a chocolate layer or spreading on a cream cheese one to prevent the bottom crust from getting soggy, and I ended up spreading a layer of a mix of softened cream cheese, sugar, and a bit of whipped cream the recipe called for. I will do that again as well, it turned out amazing! Such a refreshing bottom layer to compliment the sweetness of the filling. No soggy crust either. I also used the ratio of 3/4 whole berries in the pie and 1/4 mashed, and I only used a 1/4 cup of sugar too! A delicious pie that I will make again and again.

Brown Sugar Meatloaf

This meatloaf recipe was to die for. I have never made a better meatloaf my whole life! The menfolk loved it, and I was hoping there would be leftovers for sandwiches, but there wasn't any! I wanted to follow the recipe to a T, but I didn't have saltines, or an onion. So I used those buttery club crackers, and I grated 3 carrots. I also added some dried sweet basil. It was delicious. I am asked to make this every weekend now.

Vegan Pancakes

I tried this recipe this morning for my son and I and they were wonderful!! I especially loved the fact that the ingredients were things I already had in my pantry. No "fancy" ingredients that I would have to substitute. But, I did use 1 cup rice milk and 1/4 cup water instead of 1 1/4 cup water. I found that spreading the batter evenly with the back of a spoon really enabled the pancakes to cook evenly and not stay uncooked in the center. Wonderful recipe. And to the reviewer who stated that just because this was a good vegan subtitute for "normal pancakes" that it wasn't worth 5 stars, I would like to disagree. I don't think a regular buttermilk pancake is 5 star cuisine. I feel that vegan recipes are just just as good, if not better than "regular" food. They are much kinder to your health, the planet, and the animals who would have suffered for that buttermilk. I think this compares to the best. 5 stars.
