Pot Roast in Beer

Probably more like 3.5 stars. It's not bad, but despite the fact that I added more garlic, plenty of salt and pepper, and oven roasted potatoes with paprika and oregano it was still very bland. Kick it up a notch with your favorite spices and this will be a 4-5 star recipe.

Asian Salmon

This is an excellent dish. I did add some fresh grated ginger and the juice of 1 lemon. The thick filets I had were perfectly cooked in 25 minutes. I made the dill rice, but it wasn't anything too special. I will use fresh dill next time. Add a fresh green vegie on the side and you have a quick and healthy meal. Will definitely make this again.

Honey Hoisin Pork Chops

This was very good. Quick and easy for a week night dinner. I only made 1/2 the recipe and added about 1/2 tbsp of lemon juice to freshen it up a bit. I thought it could use a little kick though, maybe some siracha or hot chili sauce. Will definitely make this again. Thanks for the recipe, Denise!

Blueberry Pie

This was the first pie I have ever made. It was really easy and quite good. Even my parents, who owned a catering business and have made 4+ wedding cakes raved about this. I followed the directions exactly, and the only thing I will change next time is to add another cup of blueberries, since my pie fell once it cooled. With that change this would be a 5 star recipe. Also, I shared this recipe with a friend whose husband is diabetic and she substituted Splenda and no one could tell.

Guinness® Corned Beef

I just tried a piece of this straight out of the crock pot....best corned beef ever! Growing up with a last name like Fitzpatrick, I have had my share of corned beef. A few minor changes. I used one Guinness and added enough beef broth to cover the beef. I also added the seasoning packet and just let it simmer for 8 hours on low. This is my new standard corned beef recipe. Fabulous!

Slow Cooker Teriyaki Pork Tenderloin

This was very good, moist and tender. I did make much more of the sauce than it called for. I used a 1 pound tenderloin and still doubled the sauce. I also added a splash of orange juice into the sauce and it complimented the teriyaki very well. Husband who is picky about meat and a friend that does not really like pork both enjoyed and gave it 4 stars.
