Cream Cheese Frosting II

I don't bake often, but this was an easy frosting and turned out perfect for a poppyseed cake. I used one pkg cream cheese and three cups confectioners sugar as suggested by others. I also added a bit more of vanilla -- not much. It turned out delicious and was more than enough for one cake. Might have to bake another cake this week so I can use it up!! Yum! Enjoy!!

Sour Cream Poppy Seed Cake

This was delicious!! So happy I tried it... I added one t. Almond extract -- love to use that flavor ... Everything else was very much by the recipe. I had xtra large eggs, so I may have used slightly more than four regular, but all was good! I also soaked the poppyseeds in milk for a couple hours before adding. I used a springform pan rather than a bundt -- it took about 45 minutes to bake. I was worried it baked too long, but it came out perfect! I made this for my mom's bday and topped it with a cream cheese frosting that turned out perfect! Might make again this week just to use up the leftover frosting I have!! Yum!

Washabinaros Chili

I liked it, but I tasted the coffee and the port that I used, and that bothered me a little bit. I will try it again with a few alterations ... maybe more tomatoes, weaker coffee and slightly lighter brew.

Broccoli and Sausage Cavatelli

Simple and tasty! I opted out on the red pepper due to little ones sensitive to "hot" spices in the household and added a variety of Italian seasonings ... Less olive oil and a great option for leftover sausage; Parmesan is delicious on top.

Cheesy Ham and Hash Brown Casserole

We liked this. My husband is allergic to eggs and this is one of the first eggless breakfast casseroles that we've come across that we liked ... would probably add ham next time around and skip the parmesan.

Vegetable Medley Casserole

I took the suggestion of adding some cubed hash browns; I used cheddar cheese, since I had that; opted out on the water chestnuts; omitted the salt and pepper, since the soup is fairly salty. Brought to Christmas Eve and received a lot of positive feedback. Good for a large crowd and will definitely make again. May add chopped and sauteed onion and skip the french-fried onions altogether.
